

I know that baked fruits are nothing new, but this baked apples recipe is ever so slightly different. Typically, these recipes are designed to be desserts, and they’re full of butter and sugar. Delicious? Yes, but it’s pretty much only able to be eaten as a dessert. This version was created with breakfast in mind, slightly lighter, healthier, and you can still use them in dessert recipes if you wish.
It still uses vegan butter and sugar, but in much lesser quantities and they have some added candied nuts. The nuts are based on a recipe I made last Christmas, but again, a slightly healthier version. As the pecans roast, some natural oils from them are released, which helps make up for the lack of butter in the recipe.

Nutritional Information
Each serving contains just 106 calories, and 9g of sugar, most of that being natural sugar from the apples. There’s 2.5g of fibre and 1g of protein per serving, as well as a quarter of the recommended daily amount of omega 3 from the pecans.
Serving suggestions:
- Eat alone
- Serve with some vegan Greek style yoghurt
- Eat as a dessert with some ice cream
- Chop up and serve as part of a parfait
Storage and keep
I wouldn’t recommend storing these as the recipe is much better when it’s warm and freshly baked, but you can eat them cool if you wish. Store in an airtight container and keep refrigerated. Eat within two days of cooking.
Pecan Baked Apples Recipe
Warmly spiced baked apples topped with orange candied pecans, gently baked to bake a deliciously sweet breakfast or dessert.
This recipe is gluten free, dairy free, soy free and vegan. It does contain nuts.

Pecan Baked Apples Recipe
Ingredients
- 2 apples cored and halved
- 1 tsp vegan margarine
- ¼ tsp ground cinnamon
- ¼ tsp ground ginger
- 2 tsp brown sugar
- ¼ cup pecans crushed/ roughly chopped
- 1 tsp orange oil or extract
Instructions

Preheat oven to 180°c

Mix together the vegan butter, sugar and spices and lightly spread over the flesh side of each apple half.

Place the apples on a baking tray, flesh side up.

Add the pecans to a small dish with the orange oil or extract and toss to lightly coat. Sprinkle the coated pecan pieces over the apples and pour over any remaining extract that may be in the bottom of the dish (there might not be any left depending how well the pecans are coated).

Place the tray in the centre of the oven and bake for 25 minutes.
Serve and enjoy!

I love how that is such a healthy dessert, and I love pecans so much! I like how simple the recipe is too. I would go for a dessert, I don’t like anything too sweet in the morning tbh. Thanks for sharing!
