
When I see stuffed peppers usually, they’re typically filled with grains and rice. I realised recently it had been a while since id had stuffed peppers and wanted to try something new. This stuffed peppers recipe is essentially filled with a lentil ragu sauce. It’s rich and tomatoey with a full bodied flavour, but without the heaviness of the pasta. By all means, if you want to throw some pasta in there too, you do you, that sounds great, but this is more of a lighter recipe, possibly more of a lunch idea.
The lentil filling is made separately, so you could even make a larger batch of that as a meal prep option ready to serve with pasta or add to your peppers another day.
Iron Sources
This recipe is the final high iron Plant Sourced recipe this month, the main iron source in this recipe is the lentils, topped up by the fact there are several varieties of tomatoes in this recipe. Per serving, this recipe contains 7mg of iron, which is nearly the full amount for men over 18 and women over 50 (8.7mg) and nearly half of the RDA for women between 18 and 50 (14.7mg/ 48%).
The lentils in this recipe make up 3.12mg per serving, the rest is topped up by the vegetables.
Nutritional Information
This dish is so good for you in terms of vitamins and minerals. It’s incredibly rich in B vitamins, providing the full recommended daily amount of vitamins B1 and B6, and over 50% vitamins B2, B3 and B5. It also provides the full amount of your daily folate, vitamin C and vitamin A (with 87% RDA equivalent).
Each serving provides 20g of both protein and fibre.
Lentil Stuffed Peppers Recipe
An easy, very healthy stuffed peppers recipe. This recipe is filled with a lentil ragu style filling to provide iron and protein, as well as a range of vitamins and other recipes. The ragu is a great meal prep option that can be served with so many other ingredients too.
This recipe is gluten free, dairy free, soy free, nut free and vegan friendly.

Lentil Stuffed Peppers Recipe
Ingredients
- 1 tsp olive oil
- 1 brown onion diced
- 3 cloves garlic roughly chopped
- 70 g Portobello mushrooms
- ½ cup green lentils
- 1 cups vegetable stock
- 1 tin chopped tomatoes
- 2 tsp tomato paste
- 70 g sundried tomatoes
- 2 peppers
- 2 tsp dried rosemary
- 1 tsp dried basil
- Pinch of chilli flakes optional
Instructions

Preheat oven to 190°c and place your peppers, sliced in half lengthways, on a baking tray.

Heat a large saucepan on medium heat. Add the oil and wait for it to heat up. Once hot, add the chopped onion and cook for 5 minutes, stirring regularly. Then add the garlic and cook for a further 2-3 minutes, continue to stir.

Stir in the herbs and chilli flakes and cook for one minute. Then add the mushrooms and tomato paste. Stir to evenly combine, then add the lentils, stock and chopped tomatoes. Bring to the boil then reduce to a simmer and cook for 20-25 minutes until the lentils are almost fully cooked.

Stir in the chopped sundried tomatoes then transfer the mix into the sliced peppers. Place in the centre of the oven and cook for 15 minutes.

These would be great for a lunch, I feel like I need to eat more healthy when it comes to lunch time – I usually just eat something super quick and then get back to work. Yum! We’re actually having stuffed peppers for lunch today. Though, I will admit, we are eating the meat version. Would be fun to try out a vegan version in the future!
