

I know I’ve made a couple of butternut pasta dishes in the past, but this one is different, I promise! This creamy butternut squash pasta recipe is made with vegan butter and non-dairy milk to give it a creamier taste, but isn’t a creamy pasta like a mac and cheese. It’s a perfect in between if you don’t want something too tomatoey but also don’t want anything too rich either. Â
There are a couple of different ways to serve the sauce, either with some texture still in the squash (how I served mine) or you can blend it so that it’s fully smooth, which could be a great option to sneak some extra vegetables into your kids. Â
I’ve included some optional nutritional yeast which gives a really slight cheesy flavour to the dish, which I think works well with the creamier sauce. But it’s only a hint, so it isn’t too overpowering if you’re not too keen on heavier creamy dishes. Â
Nutritional Information Â
Per serving, this sauce provides 7.3g of protein and just under 10g of fibre. It has a relatively high calcium content, with just over a quarter of the RDA. Butternut squash is very high in vitamin A, with this recipe proving over 100% of your daily needs, it also provides 45% of your daily vitamin C. These stats are for just the source too, if you were to serve it with a legume based pasta (like lentil, you know..) the protein, fibre and iron content will increase considerably. Â

Creamy Butternut Squash Pasta Recipe
A creamy butternut squash pasta dish with a hint of cheesiness. This dish is a great family dish, comforting and full of vitamins, easy to make and child friendly. A great option for easy midweek meal prep too. Â
This dish is gluten free, dairy free and vegan. It can be nut and/ or soy free depending on your choice of non-dairy milk.Â

Creamy Butternut Squash Pasta
Ingredients
- 1 tsp vegan butter
- 1 small red onion
- 3 cloves garlic
- 1 diced red chilli + extra chilli flakes to taste
- ½ butternut squash peeled and chopped into tiny cubes
- 2 tbsp tomato paste
- 2 tbsp nutritional yeast optional
- ½ cup vegetable stock
- ½ cup unsweetened non-dairy milk
Instructions

Heat a large sauce pan to a low to medium heat, add vegan butter. Once melted, add the onion and garlic and cook for 3-5 minutes, stirring occasionally.

Add the chopped squash, chilli and oregano and cook uncovered for 5 minutes. Cover the pan and cook for a further 8-10 minutes. Remove the lid to stir once or twice.

Then add the tomato paste and squash, and the nutritional yeast (if using), stir thoroughly to combine. Add the lid once again and cook for a further 5 minutes. Then reduce to a low heat, add the milk and bring back up to a low simmer for 5-7 minutes. Do not allow the mix to boil after you’ve added the milk.

Once ready, the squash should easily mash with a fork in the sauce. Either lightly mash the squash with a fork in the pan to leave some texture, serve with small chunks or blend the sauce if you want the smoothest, most creamy option.

Stir into your favourite pasta and add some rocket before serving.
Serve and enjoy!

Love butternut squash, love cream, so this is a go for me! I like how you said it’s creamy but not heavy, sometimes creamy dishes are overbearing, so I’d like to try and get my hands on vegan butter to try this!
