
The lemon muffin has a very firm place in most coffee shops. You walk in and want to grab a snack breakfast from the counter, the lemon muffin screams out. It likes to tell you it’s healthier than chocolate while still being sweet and satisfying. This lemon muffin oatmeal recipe is similar. It’s sweetened but fresh and zesty. Unlike the lemon muffin, this oatmeal recipe is probably healthy enough to eat daily if you chose to.
Ingredients choices
I’ve opted for vanilla soy here. A lot of you will be aware by now that it’s my favourite vegan milk anyway, but it’s important for this recipe. As lemons can be sour and bitter, I used the vanilla soy here to contrast that and add the sweetness back in as though you were actually eating a lemon muffin. If you really want/ need to sub the milk for a different dairy alternative, you may need to add another sweetener like maple syrup to this one to keep the flavours balanced.
Nutritional Information
This recipe contains just under 16g of protein and 9g of fibre per serving. It contains 14.6g of fat, but that is mostly from the added poppy seeds and almonds so they’re healthy fats. Lemon juice is very high in vitamin C, so this recipe provides a quarter of your daily amount from that alone. If you opt to use a fortified milk, it will also provide a source of calcium, vitamin D and possibly B12.
Lemon Muffin Oatmeal Recipe
A healthy breakfast oatmeal recipe that tastes sweet like cake. Fresh and zesty lemon oatmeal recipe with a source of healthy fats from the poppy seeds.
This recipe is gluten free, dairy free, vegan. It does contain soy but can be nut free if you omit the almonds.

Lemon Muffin Oatmeal Recipe
Ingredients
- ½ cup GF oats
- 1 cup vanilla soy milk
- Juice & zest of one lemon
- 1 heaped tsp poppy seeds
- ½ tsp lemon extract optional
- ½ tsp vanilla extract
- Sprinkle of flaked almonds optional
Instructions

Add the oats, lemon juice and vanilla soy milk to a small saucepan. Turn on the heat to a low to medium and cook for about 5 minutes, stirring regularly and do not allow to boil. Once the oats are nearly cooked and starting to thicken, stir in the zest and poppy seeds.

when the oats are fully cooked and ready, pour the mix into a bowl. Sprinkle with flaked almonds before serving.

Okay I am 100% going to be trying this recipe out tomorrow morning!! I haven’t had oats for a couple of weeks now (shock of shocks, bc i luv them!!), so this is perfect timing. We actually have so many lemons in our cupboard just now, so this will be a great opportunity to use one! xx
