

There’s something truly beautiful about a selection of hearty carby goodness wrapped in pastry, also hearty carby goodness. I was having an Indian night and had some leftovers, that awkward level of leftovers where there isn’t quite enough left for a full meal, and ended up making this samosa rolls recipe with what I had left.
This recipe is amazing for those who don’t have a lot of time, or that want very little fuss. You can make these as easy as you need, the pastry is premade, you can use a readymade spice mix and all you have left to do is a little vegetable prep and you’re ready to roll (pathetic dad joke pun intended).
You can make these as mild or spicy as you like, I have included a spice mix suggestion, but you can sub that for a curry powder that’s as hot or mild as you like.

This recipe makes a great snack or lunch option, and as the world starts to open up again and hopefully the weather warms up a little bit, this would make a great packed lunch option too.

As with all of my gluten free puff pastry recipes, I used a sheet of Jus Rol, which is fine, but not the greatest in terms of texture compared to regular pastry. Still hunting for an alternative.

Each serving provides 4g of fibre, 3.5g of protein, 80% of your daily vitamin A, thanks to the sweet potato, and 12% of your daily vitamin C.

GF Vegan Samosa Rolls Recipe
A delicious carby treat. This samosa rolls recipe is the ultimate comfort food, the perfect snack or grab and go packed lunch item.
This recipe is gluten free, dairy free, soy free, nut free and vegan.

GF Vegan Samosa Rolls Recipe
Ingredients
- 1 sheet gluten free jus rol pastry
- 150 g mixed potato sweet potato, regular or a combination of the two, cut into small cubes
- 50 g peas
- 1 small onion
- 2 cloves garlic
- 1 heaped tbsp curry blend
- 100 ml vegetable stock
- 1 tsp vegan butter
- Light olive oil for brushing
Instructions

Remove your pastry sheet from the fridge to ensure it’s room temperature before it’s time to roll the samosa rolls.

To make the filling, heat the vegan butter in a frying pan, add the onion and garlic, mix in the spices and fry for 10 mins until soft. Add the vegetables, seasoning and stir well until coated. Add the stock, cover and simmer for 30 mins until cooked. Leave to cool.

Cut the pastry sheet all the way down through the centre, lengthways. Place the samosa filling down the middle of each length of pastry.

Roll the pastry around the filling, brush with olive oil to seal the edges.

Cut each piece into 3, to make 6 rolls in total and place on a baking tray. Brush the tops with the rest of the oil (optional). Bake for 20 mins or until golden (or not if using GF pastry) and cooked through
