
Today I’m making sausage rolls, and I know this isn’t exactly a Christmas recipe, but I thought it was an appropriate V
egmas recipe. After all, it is the time of year for a lot of party food and is there a more classic party food than a sausage roll? Obviously, this is a vegan sausage rolls recipe. And I’m sure most of you know I don’t eat ‘fake’ meat, so I’ve made my ‘sausages’ from lentils and mushrooms. Â
Some of you may remember that back in May, I made some breakfast pastries with the gluten free Jus Rol pastry. And the GF version was nowhere near as good as the original. I’ve had to use it again today thanks to recent life events, so they don’t look as golden and delicious as they should. If you can eat gluten, use the regular Jus Rol pastry. It’s vegan, other than the all butter range, and tastes a million times better than their GF offering. Â
Negativity out of the way, these sausage rolls are really easy to make and can be prepped in advance ready to pop in the oven when you’re ready.Â
Nutritional InformationÂ
Chestnut mushrooms are naturally high in vitamin D, so this recipe contains just over 40% of the RDA per roll. Per sausage roll, there’s 4.6g of fibre, 7g of protein and 10% of the RDA of omega 3.
Vegan Sausage Rolls RecipeÂ
I made my sausages with lentils and mushrooms, with added mustard and thyme to season them. Â
An easy vegan sausage rolls recipe to serve as a party snack over the festive season.Â

This recipe is gluten free, soy free, dairy free and vegan. It does contain nuts.Â

Vegan Sausage Rolls Recipe
Ingredients
- ½ cup green lentils
- 2 cups vegetable stock
- 1 onion roughly chopped
- 2 cloves garlic
- 150 g chestnut mushrooms roughly chopped
- ½ tbsp dried thyme
- 1 heaped tbsp wholegrain mustard
- 30 g pecans or walnuts
- 1 sheet Gluten Free Jus’ Rol Pastry
- 1 tbsp olive oil
Instructions

Add lentils to a large saucepan and add the vegetable stock, bring to the boil and leave to simmer for 20-25 minutes. The lentils should be softened, but don’t need to be thoroughly cooked all the way through.

While the lentils are cooking, add the roughly chopped onion and garlic to a non-stick frying pan and cook for 3-5 minutes until fragrant. Add the roughly chopped mushrooms and dried thyme and cook for a further 4-5 minutes.

When the lentils are ready, drain any excess water (if any is present) and add the lentils and the vegetables to a food processor. Pulse a few times, then add in the pecans and pulse again. Stop when the ingredients are combined enough to hold their shape when moulded, but still have some texture. Stir in the mustard.

Put the mixture in the fridge for 30 minutes to chill before shaping. At this time, remove the pastry sheet from the fridge to give it time to become room temperature before using it.

After 30 minutes, remove the lentil/ vegetable mix and divide into 6 equal sized servings and shape them into ‘sausages’.

Cut the pastry sheet all the way down through the centre, lengthways. Place each sausage down the middle of each length of pastry.

Roll the pastry around the sausage, brush with olive oil to seal the edges.

Cut each piece into approximately 6 sausage rolls and place on a baking tray. Brush the tops with the rest of the oil (optional). Bake for 20 mins or until golden (or not if using GF pastry) and cooked through.
Serve and enjoy!

I don’t think that I ever tried sausage rolls. This vegan recipe seems quite interesting.
I love fake meats but I don’t like to rely on them heavily because they tend to have weird ingredients. I might make these for Christmas snacking!

Yummmm, this looks positively delicious. I like to eat vegan whenever I can. It sounds hearty with the lentils, mushrooms, & walnut – such an epic combination. :]
I mean, you can’t beat a sausage roll as a party food over the Christmas period. This sounds like not only a great Vegan option but also something really different that I think a lot of people would love – Vegan or not! x
