
We all love a good pasta dish, right? This Italian vegan sausage pasta recipe is a great hearty midweek dinner option. I didn’t plan this recipe, it happened when I was trying to use up a few things I had left in the fridge. Sometimes I think they’re the best recipes, because it truly shows how easy it is to make and doesn’t require any special ingredients to be purchased.
Family Friendly Dish
To me, this dish is a good way to make a vegan version of a classic. I’ve used Gosh chickpea sausages in this recipe rather than fake meat. I think the black pepper and mace seasoning in them is really commentary to the flavours in the dish. And this is a great way to reduce your meat intake if that’s something you’re aiming for. Adding them to a dish like this is a good way of trying them if you’re not sure if you’ll like them alone, and also a great way to sneak them into your kids’ food as they’re unlikely to realise it’s not a real sausage when it’s chopped up in the pasta. It’s really easy to make, and you could prep the sauce in a larger batch to reheat when required for meal prep.

Nutritional Information
As the nutritional value of the dish will vary depending on the pasta you choose to use, I’m only going to include the nutrition stats for the sauce as described down below in terms of vitamins but the total calories in the recipe box will include the pasta. I used red lentil penne, but you could have probably guessed that already.
Per serving this recipe contains 17g fibre, 15g of protein and is high in several vitamins. It has 100% or more of the RDA of vitamin C, A and B1. It also contains 25% of your daily B5 and B3, 35% of your B2 and 40% B6. If you get the chestnut mushrooms high in vitamin D, this recipe will also provide 90% of the RDA of vitamin D.
Vegan Italian Sausage Pasta Recipe
An easy family friendly vegan pasta dish, great for those trying to cut back on their meat intake.
This recipe is gluten free, dairy free, soy free, nut free and vegan.

Vegan Italian Sausage Pasta Recipe
Ingredients
- 1 red onion diced
- 4 cloves garlic finely chopped
- 2 tbsp Italian herb
- Chilli flakes to taste
- 100 g chestnut mushrooms roughly chopped
- 1 red pepper halved
- 1 tin chopped tomatoes
- 1 cup vegetable stock/ water I used Kallo Tomato & Basil for extra Italian flavour
- 3 Gosh sausages
Instructions

Preheat oven to 190c

Heat a large saucepan on medium heat. Add ½ tbsp olive oil/ a few sprays of fry spray, if necessary. Add the onion to the pan and cook for 3-5 minutes until fragrant, then add the garlic and cook for a further 2-3 minutes. Stir in the seasonings to evenly coat, then add the mushrooms for a few minutes and cook until slightly golden.

When the oven is up to temperature, add the halved pepper to a baking tray in the centre of the oven and cook for 25 minutes. If you’re cooking the sausages from frozen, also add those to the same baking tray now. However, if you’re cooking from fresh, add them approximately 10 minutes from now.

Add the chopped tomatoes and vegetable stock to the saucepan, reduce the heat to a low simmer and leave to thicken while the pepper and sausages cook.

Start cooking your pasta so it’s ready at the same time as the pepper and sausages. Cooking time will vary depending on the variety of pasta you’re using.

When the sausages, pepper and pasta are ready, drain the pasta and set aside for a moment. Roughly chop the peppers and sausages. Then, add the pasta and chopped peppers and sausages to the large saucepan. Stir for 2-3 minutes to combine, then serve.
Serve and enjoy!

This sounds really good, and I have some mock sausages in the refrigerator that I’ve been wanting to use but didn’t want to do the same thing I always do with them. (Which is just plain cabbage and sausages) So, this is a great alternative and it looks amazing. I don’t know about family but I could eat this with my twin.

This is such a perfect family meal – as it happens I have some left over sausages in the fridge (albeit not vegan) and I know Flora adores sausages and pasta so win, win for Mummy for a change! I love a good pasta dish, and sausage is one of my favorite additions! We have had pasta salad a couple of times over the past few weeks, but I want to give this a go with our next box of pasta.
I can imagine sitting down for an excellent midweek meal with this dish, and topping it with a sprinkling of cheese. 🙂

This looks great, I do love the kind of meals you make from whatever you have left over. I feel like I’ve been eating a lot of pasta recently though, I think its because I usually find recipes for my weekly meals but because its been difficult getting online food orders I have just been cooking really easy and basic things from what I can find in the local co-op!
