Hi guys, this recipe is part of my 5 Autumnal Breakfast Ideas post and an adaptation of my peanut butter pretzel granola recipe. I knew I wanted to make a cinnamon granola for autumn and every granola needs added nuts. I settled on pecans as they felt more appropriate for the time of year. And I was so proud of myself for making the date syrup in my last granola recipe, I decided to use it again today. The addition of the date syrup also makes this cinnamon pecan granola oil free and refined sugar free.
The recipe itself is very simple, the only part that needs any prep is the date syrup, which doesn’t take long. Other than that, it’s as simple as mixing everything in a bowl, putting it on a tray and popping it in the oven.
Of course, as with every other granola recipe, you can add and subtract ingredients to your own preference. As long as the general ratios to wet and dry ingredients are roughly the same, the recipe will still be a success. So, if you’d prefer to swap the pecans for another nut then that works. Or, not a fan of dried fruit? No problem, add in extra nuts or some seeds to bulk up the mixture slightly.
As always, I’ve used gluten free oats, but you can use any kind you like. Granola in my house lasts approximately 5 minutes when I make a batch. And it’s one of those things that everyone eats a different amount of depending on what they’re eating it with. So, there’s no ‘serves’ number added to this recipe.
This recipe is gluten free, dairy free, vegan and soy free.
Cinnamon Pecan Granola
- 1 ½ cups oats
- 1 cup pecans
- ½ cup dried fruit I used raisins
- 75 g pitted dates
- 150 ml cold water
- 2 tsp ground cinnamon
Preheat oven to 170°c
Add the cinnamon, dates and water to a blender and blend until smooth. Then add the mixture to a small saucepan on a medium heat and warm through for 5 minutes. Do not allow the mixture to boil.
Meanwhile, add all dry ingredients to a mixing bowl and stir to combine.
Once date syrup mixture is ready, pour over dry ingredients. Stir through until all dry ingredients are evenly coated.
Spread mixture evenly on a baking tray and place in the centre of the oven for 20-25 minutes until golden.
Serve and enjoy!
