
This post came about completely by accident. It was December 30th, I needed to use up the last of my leftover Christmas veg, and I was getting more than a little bit bored of thyme and rosemary. It had been about a week since I’d eaten anything remotely spicy, and I decided to add some chilli and add a twist to my roasted parsnips recipe. I wasn’t expecting anything special…but they went a little jammy when roasted with the maple syrup. Chilli, jammy parsnips? Yes please. And I needed to share them quickly, and I’d also need more parsnips to take photos. I was possibly one of the very few people shopping for more parsnips in the first week of January, but here we are.
If you follow me on Twitter, you may have seen me talking about reshuffling my January schedule so I could get a recipe up sooner? This is the one. And the second batch tasted just as good as the first. Even if you’re a little sick of them after Christmas, I promise they’re worth it!
And parsnips are in season until early March, so you have a little time.

Ingredient Choices
Mine are vegan, roasted in maple syrup, but you could swap that for honey if you wanted/ that’s more convenient for you. In terms of parsnips, you ideally want thinner ones. Of course, you can chop larger ones to be a little thinner, but slightly skinnier ones will make the prep easier.
Chilli Maple Roasted Parsnips Recipe
This recipe is gluten free, dairy free, soy free, nut free and vegan.
Note: when prepping the parsnips please don’t be tempted to add salt. This will cause them to crisp up more when cooking and you won’t get the jammy coating I was talking about earlier. If you wish to add salt, please add it before serving.



Chilli Maple Roasted Parsnips Recipe
A jammy chilli roasted parsnips recipe. Seasonal recipe, and great for using up leftovers.
Ingredients
- 500 g parsnips chopped into thin slivers, like chips
- 2 tbsp maple syrup
- Drizzle olive or sunflower oil
- Generous amount of black pepper
- 1 tsp chilli powder adjust to your own spice preferences
Instructions

Preheat oven to 190°c.

Add chopped parsnips to a baking tray (you may need two). Drizzle your parsnips in the oil then add the chilli powder and drizzle over the maple syrup. Shake the tray to distribute the oil/ maple syrup. For this recipe, I prefer doing it this way rather than evenly coating them in a bowl first as I think the jammy texture is nicer if there are some sweeter/ spicier bites.

Place in the centre of the preheated oven for 20 minutes, remove and shake/ turn the parsnips then roast for a further 15-20 minutes until cooked, jammy and slightly crisp.
Serve either as a vegetable side add to a bowl and eat as a snack. I've done both, they’re a pretty great snack...

Excuse me, these look absolutely unreal but I’m so gutted I didn’t get to try this on Christmas?! Never mind, parsnips are one of my absolute FAVOURITE vegetables and we have them so often that I’m sure we’ll find an opportunity haha! I love roasted veggies, including parsnips. Usually just roast them, without any seasoning or just use thyme. Yours look super yummy.
