I know, I know, ice cream at this time of year isn’t exactly the dessert of all desserts to fulfil all cravings. But not being able to eat coconut (well, no more than a tiny bit), I know how hard it is to find vegan desserts beyond basic vanilla. And I don’t think I should be missing out. Mint chocolate chip used to be one of my favourite ice cream flavours, and as mint is an extremely common Christmas dessert flavour, I thought this mint chocolate chip ice cream recipe would make the perfect creamy accompaniment to your chosen dessert this Christmas. Like maybe to serve with an After Eight brownie (come back next week).
Alternatively, of course, you can eat this alone. And in the middle of summer if mint choc chip happens to be a favourite flavour of yours too.

Nutritional Information
Each serving of this ice cream provides 2g of fibre, 4g of protein, 309 calories, 3.5mg of iron and 45% of your daily vitamin K.
Ingredient Substitutions
In place of the coconut milk/ cream commonly used in vegan ice creams, this ice cream contains soaked cashews mixed with vegan cream. I used the Elmlea Plant Double cream alternative in mine, which has a vegetable oil base. As the cream is also soy free, it means that this ice cream has a nut and vegetable oil base. Unfortunately, the cashews cannot be substituted here unless you opted to use coconut cream in its place.
Storage and keep
This recipe needs storing in the freezer if you don’t wish to consume it straight away, but you all knew that. For the best results and the creamiest scoop, thaw for 10-15 minutes before serving. And it’s best consumed within one week of freezing.
You will require an ice cream maker for this recipe, so don’t forget to place the bowl in the freezer the night before! No ice cream maker? There’s no better week to buy one, and you can pick some really affordable ones up right now.

Vegan Mint Chocolate Chip Ice Cream Recipe
Deliciously creamy vegan mint choc chip ice cream recipe made with fresh mint. Coconut free vegan ice cream recipe.
This recipe is gluten free, dairy free, soy free and vegan. It does contain nuts.

Vegan Mint Choc Chip Ice Cream Recipe
Ingredients
- 1 cup fresh mint divided
- ¾ cups raw cashews soaked for 8 hours, then drained
- 200 ml vegan double cream
- ½ tsp – 1 tsp peppermint extract
- 1/8 cup caster sugar
- 1/8 cup liquid sweetener
- 1 ½ tbsp vegetable oil
- 1 tps vanilla extract optional
Instructions
-
Set your churning bowl in the freezer the night before to chill. Soak your cashews the night before as well, or for at least 4-6 hours before blending.
-
When ready to prepare ice cream, steep HALF of your fresh mint leaves in the vegan cream. Bring the cream to a low simmer in a small saucepan and add the mint leaves, then turn to low. Use a wooden spoon or muddler to puncture the mint so it infuses the cream. Keep on low for a few minutes, then kill heat and let cool. Once cooled, strain out the mint leaves and pour the cream right into a blender.
-
Add remaining ingredients, including the drained cashews and remaining fresh mint and blend until creamy and smooth.
-
Add mixture to your chilled ice cream maker bowl and churn according to manufacturer’s instructions until thoroughly chilled, about 45 minutes. It should resemble thick soft serve. A few minutes before your ice cream is ready, add your chocolate chips to the mix to churn into the mix for the final few minutes.
-
Once ready, can eat straight away as a soft serve texture.
-
For a firmer scoop, transfer ice cream to a freezer-safe container and freeze until hard – at least 6 hours, preferably overnight. Will keep in the freezer for up to one week, though best when fresh.
-
Before serving, let thaw on the counter for 10-15 minutes to soften.
Serve and enjoy!
Are you pro or against the idea of winter ice cream? I know it’s not for everyone.
Until tomorrow,

So yummy ❤
This sounds amazing. I make vegan ice cream a lot because I used to be lactose intolerant growing up.
Hope you’re having a lovely weekend.x
