
This month’s Health Unwrapped ingredient of the month is coffee, and I have a range of breakfast and dessert/ snack recipes on the way, starting with this vegan coffee cookies recipe. As I’ve mentioned before, as much as I love coffee, I hate anything coffee flavoured. So, I’m taking this month as a challenge to myself to try and change that too.
When I have people over, I like to make one dish using an ingredient they’re not keen on (one of several on the table, I’m not evil) to try and get people to try something in a new way and maybe enjoy a food they thought they wouldn’t. This month, I’m playing myself at my own game.

Nutritional Information
Each cookie provides 198 calories, 4g of protein and 3g of fibre, 20% of your daily vitamin E and 10% of your daily B2 and vitamin D.
In terms of the coffee content, there’s half a tablespoon per cookie, which is roughly 85mg of caffeine. A reminder, ‘too much’ caffeine is considered to be more than 400mg a day, so each cookie is just under a quarter of your daily quota.

How long do they keep?
If you want to make a batch of these in advance, you can freeze the dough to use at any time. Simply defrost and cook. And check out my cookie dough recipe post for ways you can use frozen dough. If you don’t want to freeze the dough, you can store the dough in the fridge for up to a week, and the cooked cookies will also be good for 5-7 days in an airtight container.

Vegan coffee cookies recipe
Rich dark chocolate gooey cookies with coffee.
This recipe is gluten free, dairy free, soy free and vegan. It does contain nuts, but you could opt for a seed butter alternative if you are catering for a nut allergy.

Vegan coffee cookies recipe
Ingredients
- 1 cup oat flour
- ½ cup light brown sugar
- ¼ cup almond butter
- ¼ cup vegan butter
- 4 tbsp instant coffee
- 1 tbsp boiling water
- 2 tbsp cocoa powder
- 1-2 tbsp vegan milk
- 1/5 cup dark chocolate chips
Instructions

Preheat oven to 180°c and line a baking tray with greaseproof paper.

Mix your nut butter, vegan butter and sugar in a food processor until thoroughly combined and smooth. Add your boiling water to the instant coffee and mix to make a thick paste. Then add it to the food processor with the milk, and continue to mix. Add in the cocoa powder, then slowly add in the flour, bit by bit, until combined and smooth.

Add the chocolate chunks and pulse a few times until it’s evenly mixed into the cookie dough.

Spread the mix into 8 equal sized servings and roll each one into a cookie shape with your hands.

Place on the baking tray and bake for 13-15 minutes for hard outsides and chewy centres. Place on a wire cooling rack to cool before serving.

these sound sooo lush, omg. as much as i love coffee, i don’t think i’ve ever used a coffee-flavoured recipe for something usually not coffee-flavoured. i’ll have to change that! you made me chuckle with what you said about sneaking in an ingredient. my grandma once did that when she made an upside down cake (i think?), and her grand-nephews were shocked to find out that she had used sour cream after they had been so vocal about hating it :’) x
The question is, how will I be able to stop eating these?? They look amazing!
