

I was originally going to include this recipe in my dessert oatmeal recipes post last month, however as the others were all regular oatmeal recipes rather than baked oats, I decided to ditch it. But, almost every comment on that post was someone saying how much they loved the look of the brownie batter oats option, so I decided to share the other version.
Now, this brownie batter baked oats recipe contains a lot of the same ingredients as the last one so the obvious main difference is in the texture rather than the taste. If you liked the sound of that recipe but don’t like the texture of regular oats, this one might be for you.
If you’re wondering how brownie batter baked isn’t just a brownie recipe, the answer is in the oats. I used chunkier old fashioned rolled oats for this recipe; steel cut oats would also work. The thicker oat texture stops them becoming too soft as they absorb the liquid and gives it a slightly crunchier texture to prevent the oats performing like an oat flour.
The overall texture of this recipe is more like a crunchier granola on the outside, but gooier with melted chocolate in the centre.

Nutritional Information
Per serving this recipe contains 12g of protein and 10g of fibre. As dark chocolate/ cocoa are iron sources, it also contains 4mg of iron per serving, which is just over a quarter of the recommended daily amount. It also contains a quarter of your daily vitamin E. If you’re opting to use fortified non-dairy milk this recipe will also be a source of calcium, vitamin D and B12.
Brownie Batter Baked Oats Recipe
A crunchy baked oats recipe with a soft and gooey centre, with melted chocolate and creamy peanut butter. A perfect easy breakfast recipe for those with a sweet tooth.
When choosing chocolate, chunks will provide larger gooey blobs of melted chocolate, but they’ll be isolated in certain areas. Chips will provide a less rich taste, but you’ll get tiny bits of melted chocolate with almost every bite. You can choose which you’d prefer.
This recipe is gluten free, dairy free, soy free (depending on the chocolate you choose) and vegan. It does contain nuts.

Brownie Batter Baked Oats Recipe
Ingredients
Oats
- ½ cup old fashioned rolled oats
- 1 tbsp cocoa powder
- 1 tbsp powdered peanut butter
- ¾ cup hazelnut milk
- 15 g dark chocolate chunks or chips
To serve
- 1 tsp peanut butter
- 2 tbsp vegan yoghurt optional
Instructions

Preheat oven to 190°c

Mix all ingredients for the oats in a deep, oven friendly dish. Add the milk ¼ cup at a time, you want the oats to be moist (sorry) but you don’t want any surplus liquid in the bottom of the dish (it’ll burn in the oven). Let the mix sit for 5 minutes to absorb some of the moisture from the oats then place in the preheated oven to cook for 20-25 minutes.

Once ready, scoop into a bowl and add toppings/ ingredients to serve.
Serve and enjoy!
