
We’ve all heard of avocado breakfast puddings, but I’m not about to go all Kourtney Kardashian on you and tell you the bowl of green stuff is going to change your life. But if you don’t opt for plain avocado, the default is to go for a chocolate option. Which is why I’m sharing this blueberry breakfast pudding recipe with you today. I wanted to opt for something fruity and a healthy breakfast option while still being sweet and creamy.
You can opt for any other frozen fruit in this recipe if blueberries aren’t your thing, but keep in mind that I was opting for something that would eliminate the green colour. If you want to opt for something like mango or pineapple, it will work and I’m sure it will be delicious, but the colour might be less than appetising.

Nutritional Information
Each serving of this breakfast pudding contains 383 calories, 9g of protein and 12.8g of fibre.
Per serving, you’ll also get 40% of the recommended daily amount of vitamin C, 30% of your daily folate and over a quarter of your daily B2, as well as 20% of the RDA of both B5 and B6, and two thirds of your daily vitamin K.
Ingredient Choices
I opted to make mine with some blueberry oats which added a little bit of sweetness to this recipe, and used a sweetened dairy free milk, so I didn’t feel the need to sweeten this further. However, if you have a particularly sweet tooth or are using regular oats, feel free to add a tbsp of maple syrup or agave to this recipe.
Storage and does it keep
You could theoretically make this in advance and keep it in the fridge as an overnight recipe, but keep in mind that it will get thicker if you do that and it will be more set than a creamy pudding. Do not store any longer than the next day, I would recommend prepping a larger batch of this for the week.
If you do wish to store it overnight, keep it refrigerated in an airtight container.

Blueberry Breakfast Pudding Recipe
Ingredients
- 1 small ripe avocado
- 1 cup frozen blueberries
- ½ cup sweetened dairy free milk of choice
- ¼ cup oats
- 1 tbsp liquid sweetener optional
Instructions

Add all ingredients to a blender and blend until smooth and creamy.

I opted to add all of my ingredients straight to the blender, but to make this recipe as smooth as possible, you can blend the oats with a milling blade first to make the recipe even creamier.
