
This post is a special one. I know Recipe A Day May is nowhere near finished for you, but this is my 31st. We’re officially recipe a day done, for 2019 at least. And it’s May 15th. Last year, I finished making my May recipe posts on May 31st. This year, I had a goal of finishing by the 20th and I wasn’t being too vocal about it in case it didn’t happen. To say I’m excited about finishing this early is an understatement by a long way. Anyway, you don’t care about that, today’s post is a hot berry breakfast quinoa recipe. I’ve done a few quinoa breakfast recipes in the past, but most of them have been overnight breakfast options and more chocolatey than fruity.
I added some additional fruit, chia seeds, and some chocolate buckwheat to top mine, but you could easily make the quinoa alone and still have a delicious breakfast. Alternatively, sub the cocoa buckwheat for a little granola to give it some extra crunch without the extra step.
This recipe is a great alternative to porridge and contains a few extra grams of protein too. If warmer weather appears, or you don’t like hot breakfasts, you can eat this cold. Leave in an airtight container and eat it within 3-4 days of making it and you can meal prep this for the next morning.

Nutritional Information
The nutritional information listed includes all of the additional toppings I added as well. This recipe is very nutritionally dense, it provides 13g protein per serving and 100% of your daily omega 3 thanks to the chia seeds. The berries provide 100% of your daily requirement of vitamin C. It also contains 13g of fibre, which is over 50% of the RDA. This recipe is also a source of iron, vitamin E and vitamin K.
Berry Breakfast Quinoa Recipe
This recipe is gluten free, dairy free, soy free, and vegan. I used almond milk for mine, but the recipe can easily be made nut free if you used an alternative non-dairy milk.

Berry Breakfast Quinoa Recipe
Ingredients
Berry Quinoa
- 45 g quinoa
- ½ cup almond milk plus extra for serving and potential top ups
- 1 cup frozen berries separate into two ½ cup servings
- Dash of vanilla extract
- 1 tsp sugar optional
To serve
- 10 g buckwheat
- 1 tsp cocoa powder/ ½ tsp raw cacao
- 1 tbsp chia seeds
Instructions

Thoroughly rinse quinoa before cooking. Heat a small saucepan over medium heat. Once hot, add rinsed, drained quinoa and toast for 3 minutes, stirring frequently, to dry up water and slightly toast. Add half a cup of frozen berries and cook for a further minute. Set the remaining half a cup aside to defrost while the quinoa cooks.

Add almond milk Bring to a boil over high heat, then reduce heat to low and cook for 20-25 minutes, uncovered, stirring occasionally. If it stops simmering, increase heat to medium-low. You’re looking for a slight simmer throughout the cooking time. Don’t allow to boil.

Meanwhile, heat a small frying pan on low-medium heat. Once hot, add the buckwheat and toast for one minute. Stir in the cocoa powder then toast for a further 2-3 minutes. Set aside until quinoa is ready.

Once the liquid is absorbed and the quinoa is tender, remove from heat and add the vanilla. Stir to combine

Taste and adjust flavour as needed, add sugar now if required. Add additional almond milk if you feel like it’s too dry.

Serve your quinoa in a bowl and add the toasted chocolate buckwheat, chia seeds and remaining ½ cup of berries.
Serve and enjoy!

I have not tried hot quinoa for breakfast before, I’ve not had quinoa all that much to be fair. I love the sound of this, I feel like I need to make my breakfast meals more exciting, I’m so lazy when it comes to breakfast. I have been looking for more alternative to use quinoa besides just a grain bowl, so this is perfect for me and I will be trying this for sure!
I’ve also been looking for more alternatives for quinoa & love this. Have you ever tried cooked quinoa mixed with a little honey, a tsp – tblsp of some chinese rice wine, a drop of sesame oil (optional) & mandarin and grapes? I love it. Maybe give it a try & put it on your blog. (Note: Mandarin is a spring fruit.)
