I try to post what I eat in a day posts as inspiration more than anything else. It isn’t nutrition advice or me telling you what to eat – it’s one day/ week of my life and you might find something you like the look of too. But when it comes to a vegan Christmas, I think there’s a genuine curiosity from both meat eaters and vegans alike to see what we’re all eating when everyone else is having an almost identical meal. So, this was my vegan Christmas dinner this year.
I’m only sharing my mains because that was the only real meal I’d eaten that day. I skipped breakfast, threw a few handfuls of dry roasted peanuts and a few glasses of Bucks Fizz/ Prosecco down my throat then got on with the main meal.
Unfortunately, I wasn’t feeling great this year and the whole meal was a bit of a struggle. I didn’t eat that much this Christmas, which feels wrong to say, but I didn’t even clear my plate.
Vegan Christmas Dinner
This year was a little different, I was only cooking for two on Christmas Day, but I was making Christmas Dinner for 5 again on Boxing Day as my grandparents were coming. While doing it all again the following day isn’t ideal, it did mean that I could have a little more fun with my dinner prep this year, and as the elders weren’t attending, actually season my food this year. Shocking, I know.
I’ll link everything below for the individual components, but I made everything other than the gravy. And I’m well aware that not making the gravy was a lazy option.

Dessert

Yes, I had to wait three hours for dessert. I don’t know how anyone ever eats Christmas Dinner out and has courses with a normal amount of time between them. I need a recovery window.
This year, I made a batch of my three layer mint chocolate brownies recipe, and a white chocolate custard tart, both topped with a some Elmlea Plant. I was originally planning on making my white chocolate peppermint cheesecake but may or may not have forgotten to order the Nush cream cheese the week before Christmas so had to settle for an alternative instead.

I hope everyone who celebrates had a lovely Christmas! And if you also didn’t have turkey this year, I’d love to know what your main dish was!
Until next time,
Sophie

That pastry parcel looks incredible!! We just had vegan sausages with our christmas dinner and it was my favourite meal of the year (I used your roast potato recipe and my husband has requested I make them pretty much every day since christmas day!)
