
We’re only a few days away from the official start of autumn, and I’m very excited. Autumn and winter are my favourite seasons, it’s all about getting cosy, and extra carbs. I’m very happy to be sharing my first autumnal/ fall themed recipe of 2020 this year. And today’s recipe is in collab with Mia from Beautiful Inspiring Creative Life. Over on her blog, she’s sharing a list of the things she’s currently growing, and today’s fall veggie burger recipe is inspired by some of the ingredients in her garden. She mentioned that she can find a few of them a little boring, so I’ve tried to come up with a recipe that uses them in a (hopefully) more exciting way.
How to serve it
I’ve teamed my burger in a hamburger bun (GF, obviously) with some chilli maple sweet potato fries. I don’t know why we associate maple flavours with this time of year (it’s not a seasonal ingredient) but it screams autumn/ fall to me when I’m cooking. Of course, you could also serve them with a simple side salad if you wanted a lighter option.

This ‘burger’ is more of a potato cake combined with a veggie burger. It isn’t a cook on the grill/ barbecue kind of burger. But I couldn’t think of an appropriate alternative for something that shape that I was planning on serving in a bun…so I’m sticking with it.
For anyone thinking fall veggie burger equals cinnamon, nutmeg and PSL vibes, sorry, but I wasn’t seeing a nutmeg burger with my maple sweet potatoes as the perfect combination.

Nutritional Information
Now, this one is a proper autumnal comfort food meal. It is rich in vitamins thanks to the high vegetable content, but it doesn’t contain much protein and is way too carby to be called balanced. But sometimes that’s exactly what you need, especially as the nights draw in and things get cooler.
I’m not including the burger bun in the nutritional information as that can vary a lot brand to brand, so the following is for one serving of the fries and one burger patty.
Each serving provides 50% of your daily vitamin C and the full RDA of vitamin A, including the retinol equivalent. It provides 7.1g of fibre, which is just over a quarter of the recommended daily amount. You’ll also receive between 20 and 30% of the RDA of vitamins B1, B2, B3 and B5, as well as 40% of your daily B6 per serving.
Fall Veggie Burger Recipe
Embracing autumn with a healthy veggie meal, mixing sweet and spicy to suit everyone’s spice tolerance. Hearty potatoes with butternut squash, caramelised onions, and a hint of chilli. Served with complementary chilli maple sweet potato fries.
This recipe is gluten free, dairy free, vegan, soy free and nut free.

Fall Veggie Burger
Ingredients
- 1 medium baking potato peeled and cubed
- 2 cups either butternut squash or sweet potato peeled and cubed
- 1 tsp dried thyme
- Pinch of chilli flakes to taste
- 1 red onion thinly sliced
- 1 small carrot roughly chopped
- 1 clove garlic roughly chopped
- 1 tbsp olive oil
- 1 tbsp brown sugar
- 1 ½ tbsp balsamic vinegar
Chilli Maple Sweet Potato Fries
- 2 medium sweet potatoes chopped into fries (skin on)
- Light drizzle of oil
- 2 tbsp maple syrup
- 1 tsp hot chilli powder
Instructions

Place a non-stick pan on a low heat, add the olive oil. Once the oil is hot, add the sliced onion and cook for 15-20 minutes until golden and softened. Then add the chopped garlic and carrots along with the sugar and balsamic vinegar to start the caramelisation process. Leave to cook for 8-10 minutes.

While the onions are cooking, add the potato and sweet potato/ squash to a large saucepan, add water and bring to the boil and cook for 20 minutes. It should be partially cooked but still slightly firm at this point.

Once both the onions and potatoes are ready, preheat the oven to 190c. Drizzle a baking tray with olive oil and place it in the oven to heat the oil while the oven gets up to temperature. While the oven is heating up, add everything from both pans to a food processor with the dried thyme and chilli flakes. Process on low until everything is combined and smooth enough to hold together, but still have some texture.

Divide the mix into four roughly equal servings and shape them into a burger patty and place them on a baking tray. For the best results, leave them in the fridge to chill and firm for roughly 20 minutes, but they can be placed straight in the oven.

Toss the chopped sweet potatoes in a large mixing bowl with the chilli powder and maple syrup. Remove the heated oil tray from the oven then spread the fries evenly across the tray.

Place both baking trays in the oven and cook for 25-30 minutes until the fries are golden and starting to crisp.
Serve and enjoy!

I am excited about the new season! Love the whole veggie burger. It looks delicious and packed with nutrition. You also can’t go wrong with some sweet potato fries. I like that you paired it with some maple syrup. I haven’t tried that combination before but this definitely screams some autumn vibes. I like that it was overall easy to make the patty too. Sweet potato fries are so good; I love mine with ranch dressing, but maple fries would be good on their own. A fall burger sounds just perfect to me. Loving the looks of that toasted bun and plump veggie burger.

This burger looks great, I love having a go at making my own veggie burgers. Although I feel like I end up having veggie burgers a lot when I go out to restaurants and pubs so I don’t tend to have them as much at home.
