

For a while now, I’ve been wanting to up the amount of small vegetable based dishes that I can use in multiple ways. Something that can be used like a falafel, in sandwiches, in a salad, in a macro bowl, as a side dish. But isn’t a falafel. No disrespect to falafels, I’m a fan, but I feel like they’re the default vegan options on a lot of menus and need mixing up every now and then. And as you know, celeriac is a bit of an obsession of mine right now. So, I’ve created this parsnip and celeriac root vegetable bites recipe to throw in my salads.

Like a Falafel?
For all I’m opting to serve these in the same way I would serve a falafel, this isn’t exactly a falafel sub. As these bites are almost 100% vegetables, with no flours or legumes, they contain very little protein, not a fair nutrition swap at all in my opinion.

However, I’ve spoken how much I like the Gosh! Veggie bites before and these ones fit in a similar category as those. Healthy, light and vegetable based, but not necessarily the foundations for a fully balanced meal.

Nutritional Information
This recipe makes 18-20 bites, which equates to 3-4 servings. The following values are for one third of the recipe.
As I mentioned above, these bites provide very little protein at just 6g per serving. On a more positive note, they provide 10g of fibre, the full RDA of vitamin K and two thirds of your daily vitamin C. Each serving also provides a third of your daily potassium and phosphorus. And due to the fact that it contains a flax egg, this recipe is also a source of omega 3.

Root Vegetable Bites Recipe
A versatile healthy veggie bites recipe perfect for adding to any sandwich or salad or grain bowl.
The recipe below makes quite a large batch, but they can be stored in the freezer or prepped in advance to simply throw in the oven midweek.
Once cooked, they can be eaten hot or cold if you want to pack them in a lunchbox or meal prep the night before.
OH, and as a little side note, I didn’t make the full batch of bites after I’d made enough to serve two people and discovered that the leftover mix also sort of works as a hash if that’s something you’d be interested in trying too. They don’t perfectly hold together this way, so I wouldn’t call this a hash recipe per se, but it stays together well enough when cooking to eat it that way.

This recipe is gluten free, dairy free, soy free, nut free and vegan.

Root Vegetable Bites Recipe
Ingredients
- 1 medium celeriac peeled and cubed
- 3 medium to large parsnips cubed
- 3 cloves garlic
- ½ tbsp ground cumin
- ½ tbsp dried thyme
- Pinch of Piri Piri salt
- Generous amount of black pepper
- Pinch of cayenne pepper
- 1 flax egg.
Instructions

Preheat oven to 200°c

Add the cubed vegetables to a large pan and fill with water. Bring to the boil and leave on a slow rolling boil for approximately 20 minutes until they’ve softened slightly but are still firm.

Place the part cooked vegetables and all remaining ingredients to a food processor and mix until all ingredients are thoroughly combined.

Leave the contents to cool for 5-10 minutes until it’s comfortable to handle with your hands.

Once ready to be handled, take a heaped tbsp of mix and shape into a ball. Place on a baking tray. If your baking trays are non-stick, you won’t need to prep your trays in any way. If it’s prone to sticking, line your tray with some greaseproof paper.

You should end up with roughly 18-20 balls.

Place in the centre of the oven for 25-30 minutes until they’re firm on the outside and piping hot all the way through.
