
This one has a bit it of a twist. As the winter edition of Strictly Seasonal comes to an end (two left after this one), I find myself feeling a bit repetitive with my ingredient choices. Only this time, it’s intentional. Last week’s Strictly Seasonal was the Winter Green Vegetable Soup and, as I expected, the feedback was mixed about whether people liked the idea of green soup. This recipe includes an almost identical ingredients list, presented in a much more palette friendly way. Today I’m making winter vegetable potato cakes on a bed of kale and tender greens, with a basil dressing.
It does take a while to make because you have to cook the potatoes before you put them in the oven, but there’s minimal contact time with this recipe, so it still works if you’re busy/ needing to do other things.

Seasonal Ingredients
Like the recipe last week, this one contains potatoes (obviously), kale and broccoli, which are all in season. For this recipe, I used a bag of mixed greens which also included green beans. Green beans are a summer vegetable, but you could easily make this using only seasonal ingredients if you’d prefer.

Winter Vegetable Potato Cakes with Basil Dressing
Ingredients
- 4 small-medium baking potatoes peeled and chopped
- 300 g mixed green vegetables 100g chopped into small chunks
- 100 g kale
- 1 tsp dried rosemary
- Black pepper to taste
For the dressing
- 100 g fresh basil
- ¼ cup olive oil
- ¼ cup balsamic vinegar
- 1 clove of garlic
Instructions

Add the potatoes to a large pan of water and boil for 15-20 minutes, until the potatoes are starting to cook but not fully soft.

Take 100g of the chopped green vegetables and lightly sauté in a non-stick frying pan (add oil if necessary) for a few minutes before the potatoes are ready.

When the potatoes are cooked, drain the water and mash them smooth. Do not add any butter/ milk at this stage, they won’t hold their shape if it’s too creamy!

Preheat the oven to 175°c. Set the potatoes and vegetables to one side while the oven heats up, this should give them enough time to be cool enough to handle.

Once cool enough to touch, stir the vegetables, rosemary and black pepper into the potato pan until fully combined. Then divide the mixture into four and shape them like burger patties before placing them in the oven.

Place the potato cakes on a non-stick tray in the centre of the oven for approximately 25 minutes until hot through and starting to crisp around the edges.

While they’re in the oven, add all dressing ingredients to a food processor or blender and combine until smooth.

5 minutes before they’re due to come out, add a small amount of water to a medium pan on medium heat and add the kale. Leave for a couple of minutes, stirring occasionally, until it has wilted. Sauté the remaining vegetables before serving.

When the potato cakes are ready, divide the greens evenly between four plates then and the potato cakes and drizzle with some basil dressing to serve.
Serve and enjoy!

I hope that those of you who weren’t keen on the green soup prefer the look of this one? This one is a great winter warmer, without being too heavy and easily adaptable for different serving sizes and fillings too. If there’s one thing I love, it’s potato cakes. If we have a lot of left overs from a Sunday roast, my mum will make potato cakes with the left over roasters and vegetables and then sprinkle a bit of cheese on top at the end so it melts and it’s the most incredible tasting thing! I do dip them in ketchup too but shh. I’d definitely prefer this over green soup although it still sounds appetising! I love broccoli too, this sounds gorgeous!
