
It’s a funny time of year. the title of this post likely says winter vegetable croquettes recipe, and I know at least one of you is tutting about the fact it’s still autumn. But, when it comes to seasonal vegetables, it’s not that simple. A lot of true autumn vegetables go out of season in December at some point, while the new season winter vegetables are starting to come in. So, here we are at the very beginning of the month in a seasonal crossover in terms of food. This ‘winter’ vegetable croquettes recipe is a blend of what’s left of autumn and the start of winter. But that doesn’t fit nicely into an SEO friendly title.Â
I do have another croquettes recipe, which I made for Recipe a Day May 2018. That recipe is quite similar to this one in terms of prep and cooking times etc, but I wanted to share a more seasonally appropriate version. Â
Seasonal Ingredients  Â
The main ingredient for this one is obviously the potatoes, which are in season from early autumn to mid-winter, typically at their best from October to February here in the UK. Butternut squash are one of the crossover ingredients for this recipe, they’re currently in the end of their season (September to December). The other crossover vegetable today is the purple sprouting broccoli; that comes into season in winter, typically not until January but can sometimes be found in shops earlier. It remains in season until mid-spring (April/ May).  Â
Nutritional Information Â
Of course, it’s not likely that you’re only going to eat one croquette, but the vitamin information is going to be per croquette and you can work it out from there. Per croquette, they contain 1.6g of protein and 1.8g of fibre. As butternut squash is so high in vitamin A, even with the small amount in each croquette, you get around 60% of the RDA and 15% of the RDA for vitamin C. They also contain small amounts of several B vitamins, not enough to mention per croquette, but based on a serving of 4, you would get between 20 and 25% of the RDA for vitamins B1, B3, B5 and just under 50% of B6. Â
Winter Vegetable Croquettes RecipeÂ
This recipe is gluten free, dairy free, soy free, vegan and can be nut free depending on your choice of milk. Â

Winter Vegetable Croquettes Recipe
A vegan croquettes recipe filled with seasonal winter vegetables for added vitamins and minerals.
Ingredients
- Approx. 750g potatoes peeled and chopped into smaller cubes
- 1 cup of butternut squash peeled and chopped into tiny cubes
- 100 g purple sprouting broccoli finely chopped
- 1 tsp garlic pepper seasoning
- Pinch of chilli flakes
- ½ tbsp dried thyme
- 2-3 tbsp dairy free milk
- ½ cup dairy free milk
- 1 cup breadcrumbs I used GF but pick any of your choice
Instructions

Preheat the oven to 220°c.

Boil the potatoes for about 20-25 minutes until tender when you touch them with a knife. Then, drain and mash them. While the potatoes are cooking, add the squash to a small non-stick frying pan and cook for 5 minutes, then add the chopped broccoli and cook for another 3-5 minutes. Stir regularly and remove from heat when both vegetables are starting to lightly brown.

Next, stir in the vegetables and seasoning to the mashed potato.. Leave mixture to cool for a few minutes until they're cool enough to be handled.

Take one heaped tbsp of mixture and mould it to your desired shape.

Put the milk and breadcrumbs into two small bowls or dishes then dip each croquette in the milk, making sure it's fully covered then do the same with the breadcrumbs.

Place coated croquettes on a baking tray in the centre of the oven for 20-25 minutes until they're golden and crispy. Turn them over half way.

Once cooked and lightly golden, remove from oven and serve.
Serve and enjoy!
Recipe Notes
Cooking tip: For those of you using GF breadcrumbs, you may notice that they don’t brown and crisp as well as regular breadcrumbs do. If this is the case and you'd like them to look just like the original, spray each croquette with 1 or 2 sprays of fry spray when you turn them over.

Vegan Winter Vegetable Croquettes sound delicious. I don’t think that I’ve ever tried them. I will have to allow for the 45 minute prep time. I usually go with recipes that have less of a prep time.
I find your strictly seasonal posts so interesting and informative. I would never have thought to look into what foods are in season. Personally for myself, I would be more of just a plain potato eater. xx
