I’ve spoken before about how my eating habits can be irregular when I’m prepping for recipe posts. A little while ago I shared a post about what I ate for breakfast every day for a week, the point being what I classed as ‘breakfast’ was questionable. Right now, I’m in heavy prep mode getting ready for recipe a day may. This year I have a goal to be fully done by April 30th. 10 down by the end of February, I’m optimistic! That being said, I’m making things all the time. And I thought it could be entertaining to show what that really looks like for my eating habits. I mean, I had spicy kale nuggets for ‘breakfast’…
What I Eat In A Day – Recipe Prep Day
9am – Breakfast?
It’s a Friday. My food shopping arrives on Thursdays, I forgot to order the strawberries I needed for a recipe post this week. I was supposed to pop out and get some yesterday, but guess what?? I forgot to do that too, so I’m heading out for them now and munching on half of a cookie I made yesterday (also for May) as I’m heading out. Oh, and I’m annoyed at myself because I wanted them for an overnight recipe that I’m going to have to quickly prep this morning and hope it’s ready in time to get some photos this afternoon instead.

1pm – Breakfast?
I got back and started prepping that overnight recipe I was just speaking about, made a rough draft of my ingredients list for the recipe post. Then I started to prep another recipe post. Recipe number two is for some spicy kale nuggets. This recipe isn’t for May, that’s for my Plant Sourced series and will be going up the Tuesday after this post. As soon as they were ready, I took my photos and then ate them for ‘breakfast’ at lunchtime. I refuse to count half a cookie as breakfast…

3pm – Snack
So, it isn’t that long after my kale nuggets. But I’m working on a post ranking the best gluten free breads right now and the particular loaf I’m ranking right now has a habit of going green very quickly (I’ve had this one before) so I usually freeze it. However, I need to take my photos before that happens. So, I need to do that ASAP. The result is some mid-afternoon cashew butter on toast.

4:30pm – Snack
It’s 4:30 in the afternoon and there’s still enough light for photos, life is looking up. Anyway, that recipe I was prepping this morning did set in time to get photos. But that one is for May so I’m not sharing it just yet. One thing I will share is that it involves strawberries and strawberry yoghurt. I put my prepped recipe back in the fridge to have for breakfast the following day after I took my photos, but a few spare strawberries and a couple of spoons of yoghurt did end up in my stomach during the photography session.
8pm – Breakfast for DInner?
Ah yes, breakfast at lunchtime that resembled a main meal and then regular breakfast foods mid afternoon does weird things to your appetite. The result? A cherry & vanilla smoothie at 8pm. It was simply some frozen cherries with vanilla protein powder and non-dairy milk and some chia seeds. No toppings, no pretty photos were taken. But I wanted something small, and after a day of food prep, a 5 minute healthy meal is my favourite option. And if I’ve eaten a ‘main meal’ kind of food during the day, I usually opt for ‘breakfast’ foods later on. Smoothie bowl it is…
The one I had was roughly this one, without the cute toppings.

I know I eat weird things at weird times when I’m prepping for recipes. It’s currently the end of February, so daylight is still limited and my eating habits are more dictated by that than my stomach or any sense of regularity. This obviously is not what a normal day looks like, and I don’t usually prep this many things in one day. But it falls like that sometimes. I like having kitchen heavy days in my schedule so I can then dedicate solid laptop days typing them all up. Having said that, this was a weird one even by regular standards…
I hope you guys can see why I’m sharing this slightly less than average WIEAD. Do you guys have anything in your life causing you to swap meal times around like this?
Until next time,
Sophie
Gorgeous photos! Can’t wait to see the full posts for these 🙂
I like your breakfast option. My favorite breakfast is coffee and a croissant.

Looks so tasty going to check out your recipes
I love how healthy you eat and this was definitely an interesting post. Smoothie for dinner? Lol. But it’s great to be different sometimes and go against the grain ( pun intended 🙂 ) The Kale Nuggets look very interesting too lol.
I love reading these posts because it’s such a great behind the scenes! Your eating habits are definitely different to mine but I can see why when you are trying out so many recipes and working on so many posts. I would totally eat a smoothie for dinner though. Keep up the dedicated work Sophie xx

I never ever used to be able to fit breakfast in due to having to get the bus to work and having to leave like 2 hours before my shift but now i drive i have time for breakfast! The only weird times i have food is usually 4pm lunch when i finish work at 9pm, those days mess up my eating schedule so much!
It’s quite inspiring to see how much you make yourself! I’m super lazy and would just go out to buy these treats, although now I feel guilty about doing that haha. I love the sound of those kale nuggets!
I share my kids 50/50 with their dad so I have them every other week. The weeks I don’t have the kids my eating habits always go a bit weird. Main meal at lunch at work and then something light for dinner is pretty normal those weeks. I just don’t wanna cook for just me after getting home and being all tired
All of these options look so healthy and delicious! Recipe a day May sounds intense!
I adore smoothie bowls!

WOW… That smoothie bowl looks INCREDIBLE! How do you get it so thick? I always struggle with that haha x
I always love seeing what you eat – you still get the full nutrition while keeping yourself filled. The kale nuggets look delicious! I love the snacking in between. I am a huge snacker but need to be more mindful about what I am eating. I am all about your breakfast for dinner! It is a great way to get some vitamins in. Thanks for sharing!

Those Kale Nuggets sound amazing!! I am plant based myself and I am so excited to try those out. Thank you for sharing!
I skip breakfast because I never wake up early enough for it, I always have brunch instead. Gotta stop from midnight snacking tho! Love seeing your behind the scenes!
Hi, very good article thanks for sharing.
You are excellent blogger
All this food looks fantastic x
I loved reading what goes on behind the scenes! Although, this is why I can’t be a food blogger, if I made delicious food all day, I would spend the whole day eating everything, haha! I gotta say those cookies look amazing, can’t wait to see your recipe. I’ve also love cashew butter on toast, it makes such a tasty and filling snack 🙂 I love that you had breakfast for dinner, if you fancy something why not hey! Thanks for sharing Sophie! <3 xx

I’m really bad with remembering food especially breakfast because I have such an on the go kind of lifestyle. I really like the look of the smoothie bowl at the bottom it looks amazing x
You can’t not eat what you make! That’s one of the perks! You’re like me when it comes to remembering things. You literally forget even when you thought you’d remember! xD The kale nuggets sound so yummy!
There’s no warm meal 😀 How do you cope without a warm meal? I might just be really stuck with my habits, but I can’t imagine a day without a warm meal. For me that’s usually lunch, because I never eat breakfast. I only really eat twice a day, now that I think about it… wow, that’s a light bulb moment right there 😀 xx
Whenever I’m travelling my stomach always gets all confused over meals and what i want to eat so I can relate! Those kale nuggets look amazing though!
I like that you eat weird things at weird times. It is all about listening to your body and what will feel good, regardless of the time
Gorgeous photos, that smoothie bowl looks insanely good! It’s really inspiring to see how much you make yourself and especially in a day, I am a huge snacker so reading about your healthy alternative snacks is making me want to be healthier in my snacking options… Thank you for sharing!

Nice food inspirations ♥
These look tasty – love the pics!!
I would be eating things left, right, and center and not having anything left for photos, so I admire your self control! An honest post about what you eat in a day makes me feel better on days when I basically eat light snacks all day and never fix a ‘meal’.
Love this little behind the scenes! I think we are all guilty of eating foods at weird times, although I do have to say, a smoothie bowl for dinner is at a very strange time, but I do love cereal at night time and crisps first thing in the morning haha! Kale nuggets sound really tasty and healthy. I can’t wait for recipe a day May, you’re planning so early and it shows just how much effort you out into it, you’re fab xx
You had me at kale nuggets… what?!? Where is that link? I need them in my life. ☺♥
Okay, I really enjoyed this diary-type day in the life. I felt like I was inside your head 😉 This whole post just reminded me that being busy & productive when you’re trying to eat healthier can be a win-win: you get a lot of work done, so you’re not always thinking of snacking & grazing in the kitchen. Those kind of days have totally been a blessing in the past because of all that :’)
Always love your what I eat in a day posts! Everything looks delicious xx

You really do eat weird things at weird times! I love it! Half a cookie definitely doesn’t count as breakfast, I agree. Those kale nuggets look fab! xxx
The cherry and vanilla smoothie looks so yum x
