
This recipe was inspired by something I saw a while ago on Pinterest. I saw a sausage and seafood paella on my homepage and as much as I thought that was a weird combination, it was around the time I first discovered the Gosh sausages and thought it would be worth making a vegan version. As far as adjusting recipes goes, making a vegan paella recipe is pretty easy to adapt, mainly just subbing butter for oil and making it a vegetable paella recipe rather than seafood. I have included the sausages today, but they’re cooked separately and totally optional, you won’t need to make any changes to the recipe if you’d like it without.
I’ve spoken before about why I don’t eat fake meat, so the sausage might be a little confusing. I’m a fan of the Gosh brand because their products are all beans/ vegetable/ legume based. So, it’s not exactly fake meat, just shaped like something we associate with meat. I’ve opted for their Black Pepper & Mace ones today, which are chickpea based. Of course, you can swap this out for a fake meat sausage if you’d prefer.
Nutritional Information
Per third of a recipe, this paella contains 10g of fibre, 98% of the RDA of vitamin C and 40% of your daily vitamin K, as well as a third of your daily vitamin A. It isn’t particularly high in protein with 10.5g per serving, but that can be higher if you were to opt for different vegan sausages. 495 calories per serving.

Vegan Paella Recipe
A vegan paella recipe with optional veggie sausages, an easy vegan alternative to a classic dish and a very simple one pan dish.
This recipe is dairy free, gluten free, soy free, nut free and vegan.

Vegan Paella Recipe
Ingredients
- 2 tbsp olive oil
- 1 red onion diced
- 1 red pepper sliced
- 3 cloves garlic finely chopped
- 1 cup paella rice
- 1 tbsp sweet paprika
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 1 tbsp sundried tomato paste
- 150 g green beans roughly chopped
- 2 ½ cups vegetable stock
- 4 vegan sausages optional
Instructions

Add vegetable broth in a medium saucepan over medium-high heat. When it begins to simmer, give it 1 minute, and then lower the heat just to keep it warm.

Heat 2 tablespoons of oil in a 12-inch Paella Pan (or something similarly sized) over medium heat. Once heated, and the onions and peppers. Sauté until softened and lightly browned, about 3-5 minutes.

Add the garlic and green beans and sauté for 1 minute.

Now add the tomato paste, smoked paprika, and sweet paprika. Sauté for 1-2 minutes. (if using dried thyme, add it with this step)

Add the rice to the pan. Stir to coat well. Cook for 1 minute to lightly toast the rice and incorporate flavours. Move around occasionally to prevent sticking.

Add the fresh thyme and slowly pour in stock. Add salt and pepper. Do not stir after this point or it will release starches and cause creamier rice. Turn the heat to medium-high and bring the stock to a heavy simmer for 1-2 minutes.

Now turn the heat down (between medium-low and medium heat) to a mild simmer. You want to see movement in the pan while the broth is cooking down (don't boil though). Simmer for 15-20 minutes until rice is al dente. Rotate the pan on the burner 1-2 times during cooking for even heat distribution.

Once the broth is nearly cooked off, you will need to pay close attention to the socarrat forming on the bottom of the pan (the golden rice crust). You will start to hear a snap, crackle, and pop, along with smelling a nutty aroma. This should take 1-2 minutes to form. Stick a fork or spoon straight to the bottom to test if it's forming. (If it smells like it's burning, remove from heat immediately) (*see note).

Remove the pan from the heat. Add the peas to the top of the rice (don't mix in). Cover the pan with foil and let the paella rest for 5-8 minutes.
Serve and enjoy!
Recipe Notes
Notes* Sometimes you might not get the socarrat to form and that's ok. It all depends on the pan, fat content, heat source and experience. The more you cook paella, the better you'll get at reading the signs. I've had times where I left it too long and it burned. That is never fun, so it's better to have no socarrat than burnt socarrat. Your paella will still be delicious without it. If you don't have a paella pan, I would recommend a large stainless steel pan

Quick question – what do you mean by Paella pan? Is that just a deeper-than-normal pan?

I used to eat Paella a lot when I was younger because it was my dad’s favourite dish, I’ve had a few veggie paella’s since being vegetarian and have enjoyed them. I don’t think I’ve tried gosh sausages before, I have had their falafel though and it is very delicious!
