
Some of you may remember that I made a strawberry bircher muesli back in May for Recipe A Day May. Today I’m sharing a more traditional bircher muesli recipe as part of my vitamin D recipe series this month. As the recipe contains both vegan milk and yoghurt, as long as you use fortified non-dairy products, it’s an easy way to get in both extra vitamin D and calcium.
Vitamin D Sources
The vitamin D sources in this recipe are the vegan yoghurt and milk, providing 2µg, or 81 IU. This equates to 20% of the recommended amount here in the UK.
As the sun is the main source of vitamin D, the dietary intake amount recommended through supplementation can vary a lot from country to country. Please check your own government’s recommendations if you’re outside of the UK.
Nutritional Information
This recipe contains 21g of protein, 8.5g of fibre and is a source of several vitamins and minerals. The fortified products I used were also fortified with calcium and vitamin D, so this recipe contains a third of the RDA of both of those. It’s a source of omega 6, from the nuts and seeds as well as the soy. In terms of naturally sourced vitamins and minerals, this recipe provides a quarter of your daily B2 and just under a fifth of the daily iron requirements of a menstruating female (men and older women need less).
Classic Vegan Bircher Muesli Recipe
This recipe is a little bit different to traditional ones as the traditional variation would include grated apples rather than applesauce. I’ve opted for applesauce as it’s easier to stir in evenly and combine the flavours and it helps to add a natural sweetness throughout the recipe.
It takes a couple of hours to set, or overnight, and only takes 5 minutes to mix so it’s a great grab and go breakfast option for those with busy mornings.
This recipe is gluten free, dairy free and vegan. It does contain nuts and soy.


Classic Vegan Bircher Muesli Recipe
Ingredients
- 40 g GF rolled oats
- 150 g Alrpo Greek Style
- ½ cup 120ml Fortified non-dairy milk
- 2 tbsp pumpkin seeds
- 1 tsp flaked almonds
- 1 heaped tbsp unsweetened applesauce
- Dash of cinnamon
Instructions

Add oats to a bowl then stir in the wet ingredients until fully combined. Then add the nuts, seeds and cinnamon and stir again. Transfer mix to a jar/ airtight container and store in the fridge overnight or for at least 4 hours until the mix has set and some of the excess liquid has been absorbed.
Serve and enjoy!

I’m definitely going to try this, I’m obsessed with muesli! I grew up with it during summers in Germany and my mom made it for me sometimes at home, too, so I really miss it.
I used to make overnight oats all the time, but I’ve kind of fallen out of the habit, particularly now I work from home and can just wander around with my slice of toast or whatever! Still, there’s something appealing about a ready-made healthy breakfast, and this seems like a great recipe!

Hi Sophie. I love muesli so I’m certainly going to give this a go. I’m guessing that you could add in some other varieties of nuts if you wished (hazelnuts or brazil nuts, perhaps).
Yes, absolutely! Almonds are the traditional choice but you can add pretty much anything you want to add some healthy fats in there.

I like the sound of this! I’m trying to be more healthy with my breakfasts recently, I usually just rush in the morning with a bit of toast but recently I’ve been making some yogurt, granola, some different fruits and honey and I am loving it. I would like to get making some overnight oats though, would help with the rush in the morning before work! xx
This is a great recipe to have on hand, especially as we’re preparing to leave the summer season behind us. I know that many people (myself included) struggle with seasonal affective disorder and one of the big recommendations to better manage that is to increase our vitamin D levels.

I really love the taste of muesli but I’ve always found it quite dry, this looks absolutely delicious though! Such a perfect Autumn breakfast with the addition of cinnamon as well. I’m trying to cut down on the amount of dairy I consume so I’ll definitely be trying this recipe out soon.

I’ve never heard of bircher muesli before but I have all the ingredients for it, so it sounds like a win.
Is it bad that this is the first time I’m hearing of Bircher Museli, like clearly I’ve been living under a rock. It sounds a bit like Overnight oats a tiny bit! but also better at the same time since there’s a lot more than just oatmeal in a jar! 21g of protein!!! SIGN ME UP – this sounds like it would be great to have after a run – not too heavy to need walk a bit after like hot oatmeal sometimes does for me.
Love that you used the sweetness of the apple as a natural sweetener – I just went apple picking and may or may not have gotten nearly 12 pounds of apples because it’s who I am as a person hahaha (I usually just eat an apple before a workout/run!)
I actually want to make this for tomorrows breakfast except I just looked in my fridge and saw I don’t have yogurt ah! MONDAY BREAKFAST IT IS! The combination of apples, and cinnamon kind of makes it sounds like apple pie in disguise haha!
I personally like overnight breakfast – even if I do end up having to convince myself to make it the night before – it makes life super easy the morning of! Just grab from the fridge and you’re ready to go!

I’m not a fan of overnight oats, or breakfast in general, but I do have a green smoothie every morning. A treat breakfast would be pancakes but I never really find that I’m hungry in the mornings! x
