
If any of you saw my Crackd post last week, this peanut butter pretzel cookies recipe is for those cookies. I was originally saving this as a Recipe A Day May post, but the entire comments section on that post is about these cookies, so consider this an early gift. I realised after I posted the Crackd post I didn’t mention the flavour. If anyone was wondering, here it is and I hope you like pretzels.
Back in 2018, I posted a peanut butter pretzel granola recipe that went down really well, I loved the flavour combination, so the 2021 recipe ideas list had ‘more PB pretzel recipes??’ roughly scribbled down. There are a couple more to come, but these peanut butter pretzel cookies are the first one of the year, and they’re so simple to make with just a handful of ingredients.Â
Nutritional Information Â
As peanut butter is a main ingredient in these, it is a higher fat snack. But the nut butter comes with some added vitamins and minerals too. Each cookie provides 6g of protein and 2g of fibre. In terms of vitamins and minerals, each one provides 15% of the RDA of vitamin E, a quarter of your daily B3, 20% of your daily copper and magnesium, and 10% of the RDA of zinc. Â
5 Ingredient Peanut Butter Pretzel Cookies RecipeÂ
A super easy, one bowl 15 minute cookies recipe with just 5 ingredients. The perfect mix of a firm edge and chewy centre with the added crunch of the pretzels. Â

Ingredients Â
I used unsalted peanut butter as the pretzels are salted. Also, you want a slightly drier nut butter if possible. If it’s too runny or sticky you’ll need to chill the dough for a little while before shaping them and placing them in the oven, which sort of ruins the quick bake element. I used an oil free nut butter made from 100% peanuts to avoid this and it worked perfectly (I used Meridian). Â
This recipe is gluten free, dairy free and vegan. It can be soy free, depending on your chocolate choices.
You could also use something like Wow Butter* to make a nut free version of this too. Â

5 Ingredient Peanut Butter Pretzel Cookies Recipe
Ingredients
- 250 g peanut butter
- 200 g light brown sugar
- 1 egg replacer approx 60ml Crackd
- 75 g chocolate chips
- 50 g gluten free pretzels
Instructions

Preheat oven to 180°c

In a medium sized mixing bowl, mix the smooth peanut butter, sugar and Crackd. Use a whisk or handheld electric mixer.

Once the dough is fully combined, stir in the chocolate chips and pretzels. I crushed some of my pretzels and left some of them whole, but you can use all crushed or whole depending on how crunchy you want your cookies to be.

Chill for 30 minutes if it feels too runny or sticky. Your dough should be soft and a little bit sticky, but not so sticky that it’s sticking to your hands in clumps.

Roll your dough into 10 equal sized balls then either flatten with a fork or your hands and place on your lined baking tray, leaving enough room between them for them to spread. You may need more than one tray.

Bake in the centre of the oven for 10-12 minutes. Leave to cool before serving.
