
We’ve all seen that viral tofu chocolate mousse recipe, so I took a little inspiration from that, added some in season lemons and switched the dark chocolate for white chocolate to make this ready in 5 minutes 5 ingredient vegan lemon mousse recipe.

Each mousse pot contains 255 calories, 5g of protein and 15% of the recommended daily amount of vitamin C.
Ingredient Choices and Substitutions
With such a minimal ingredients list, there isn’t much to switch out. If you want a plain white chocolate mousse, you don’t need to do anything to replace the lemon, simply remove the lemon juice and zest. You could also add a teaspoon of another zest/ extract to the plain white chocolate mix to switch up the flavour.
The maple syrup can be swapped for any liquid sweetener of your choice, agave would be a like for like alternative. You can also use something like date syrup, but please note this will change the end colour of the mousse.

How to store and does it keep?
Simply cover your mousse pots and leave them to set in the fridge for at least 4 hours, ideally overnight. Once set, they’ll keep in the fridge for up to a week. Keep them covered as they were to set, you don’t need to do anything else to store them.
Vegan Lemon Mousse Recipe
A lemon white chocolate twist on the viral tofu dark chocolate mousse recipe. They take just five minutes to prep and five ingredients.
This recipe is gluten free, dairy free, nut free and vegan friendly. It does contain soy.

Vegan Lemon Mousse Recipe
Ingredients
- 200 g silken tofu
- 100 g dairy free white chocolate
- 1 tbsp maple syrup
- Juice of one lemon
- Zest of one lemon
Instructions

Melt your white chocolate in a glass bowl over some boiling water, or in the microwave.

While your chocolate is melting, add all your other ingredients to either a food processor or blender and mix until smooth.

Add the blended mix to the bowl with the white chocolate and use a hand mixer (or whisk) to combine. Mix until smooth.

Transfer to three pots and leave to cool. Once cool, cover your pots and place in the fridge for at least four hours, ideally overnight.

To serve, either eat as they are, or top with chopped nuts/ fruit/ chocolate chips.
