
I know posting a pasta recipe straight after my courgetti recipe is probably bad planning on my part, but that’s how these things work out sometimes. This garlic mushroom pasta recipe is rich in flavour and full of vitamins. An easy dish perfect for the whole family to enjoy.
This dish is also very easy to make in bulk for meal prep and is freezer friendly if you need some ‘just in case’ options. You could easily have this dish hot or cold, so it works for summer picnics and buffet tables too.
I added sundried tomatoes to the tomato sauce to give it a richer, fuller bodied taste and roasted peppers to add a hint of sweetness. Seasoning wise, obviously I wanted to keep the garlic as the main flavour so kept the other seasonings minimal. But, no tomato pasta dish is complete without some oregano and a pinch of chilli. Nutritional Information
It will come as zero shock to anyone that I served this with lentil pasta, bringing the total protein for the full recipe to 30g. The peppers provide 100% of your RDA for vitamin C. There’s a total of 15g fibre per serving. This recipe is also high in vitamins B1 and A and vitamin D, proving you use high vitamin D chestnut mushrooms. There’s 6g of fat per serving, which mainly comes from the sundried tomatoes.
Vegan Garlic Mushroom Pasta Recipe
This recipe is gluten free, dairy free, soy free, nut free and vegan.

Vegan Garlic Mushroom Pasta Recipe
An easy, hearty dish that the whole family can enjoy!
Ingredients
- 125 g mushrooms roughly chopped
- 6 cloves garlic 4 whole and 2 finely chopped
- 100 g sundried tomatoes chopped
- 1 can chopped tomatoes
- 1 small red onion diced
- 1 tbsp oregano
- 1 red pepper halved
- Pinch of chilli flakes optional
- Black pepper to taste
- ½ cup water/ stock
Instructions

Preheat oven to 225 c and place the halved peppers on a baking tray. Wrap the garlic cloves in some aluminium foil and place on the tray. Place in the centre of the oven for 25 minutes.

Meanwhile, in a large saucepan add the chopped onion and garlic to a low-medium heat with a splash of water. Cook for 3-5 minutes until onions become translucent and fragrant.

Add the mushrooms, oregano, black pepper and chilli flakes (if usinand cook for a further 2-3 minutes.

Then add the vegetable stock and chopped tomatoes, bring to the boil then reduce to a low simmer for approximately 20 minutes.

When the roasted pepper and garlic are ready, remove from the oven and chop the pepper into large chunks, and add to the saucepan. Peel the garlic cloves and spoon the soft garlic into the saucepan and stir to fully combine. Add the sundried tomatoes and simmer for a further 10 minutes.
Serve and enjoy!
Recipe Notes
Alternatively, store in an airtight container and refrigerate. Use within 3-4 days, or freeze it and use within one month.
I haven’t included pasta cooking in this recipe as they all cook in slightly different times, but don’t forget to set your pasta to boil too!

I would probably eat this cold personally, but then I love cold pasta dishes for lunches.
Personally I’d do it hot. But I’d eat it cold too. Anything with garlic in and I’m here for it!

I’ve been loving garlic mushrooms lately, especially with hummus on toast, so this recipe sounds amazing. Nothing beats a good bowl of pasta, hot or cold! I have all of them ingredients as well! Can’t wait to try! x
I love going overboard on the garlic whenever I use it in cooking I love it so much! I think my favourite pasta dish is either carbonara, or I make my own pesto with rocket and LOADS of garlic, so pasta with that mixed it ☺️

I would definitely serve this hot, possibly with some avocado on the side for an even creamier texture. I love the tart taste of sundried tomatoesso I’d definitely give this a go!

I love mushrooms, garlic, and pasta so I will be trying this for sure! I think I would serve it both, like once I first cook it then it will be hot, and anytime after it then it will be cold.
Mmm, you can never go wrong with pasta! Love that there are so many different ways to prepare it. I LOVE garlic and adding it into pasta gives it that extra kick. I like that there are different positive nutritional values from this dish. Thanks for sharing the recipe – I like that you don’t really have to substitute ingredients here. This sounds amazing, I’m a big fan of mushroom pasta, and I add garlic to a lot of things so I’m sure I’d love this. I like having pasta both hot and cold, but I think I prefer it served warm. My favourite pasta dish at the moment is a creamy mushroom pasta – got inspired by the game Overcooked 2 and craved a creamy mushroom pasta so found a recipe online and made it hehe.
