
This recipe is a part of a challenge I undertook back in May. I decided to see if it’s possible to eat healthily with no fresh produce for a week. For more information about that challenge, check out Tuesday’s post. This sundried tomato falafel burger recipe is really quick and easy to follow and uses minimal ingredients, all you need is a food processor.
I wanted to make my recipes as healthy as possible with no fresh produce and beans/ chickpeas were a great choice for doing that. As chickpeas are high fibre and protein, they make a healthy base. And the fact that they’re ‘wet’ means that they do well blended alone without needing any additional vegetables. This recipe started as an idea for a chickpea burger similar to this veggie burger but ended up being an Italian herb twist on falafel.
If I’d made this recipe when not partaking in this challenge, I would have also added red onion. So, feel free to include one of those if you wish. I included a flax egg in my recipe to help it hold together, although I’m fairly confident that this step was not necessary and it would have held fine without it.
This recipe can either be pan fried or oven baked.

Nutritional Information
Per serving (2 small patties) this recipe contains 10g protein and 10g fibre. The flax seeds provide 75% of your daily required omega 3, all for 225 calories.
Sundried Tomato Falafel Recipe
This recipe is gluten free, dairy free, soy free, nut free and vegan. Fresh Italian herb patties, healthy and light – perfect for summer and a great, quick midweek dinner. Serve in a burger bun, with a side salad or vegetables.

Sundried Tomato Falafel Recipe
Ingredients
- 1 red onion roughly chopped (optional)
- 1 can chickpeas drained and rinsed (approx. 230g)
- 1 tsp dried garlic
- 1 flax egg 1 tbsp ground flax, 3 tbsp water
- ½ tbsp dried oregano
- Black pepper to taste
- 70 g sundried tomatoes roughly chopped
Instructions

If you’re planning on baking them, preheat oven to 190° C.

Add all ingredients other than the sundried tomatoes to a food processor and mix until smooth.

Then add the sundried tomatoes and pulse a few times until they’re combined but still have a chunky texture.

Transfer mix into a bowl then divide into four equal sized servings and shape them into patties.

If baking, transfer them to a baking tray and place in the oven for 20-25 minutes until golden hot all the way through. To pan fry, add them to a large non-stick frying pan on medium heat and cook for 4-5 minutes on each side until hot and golden.
Serve and enjoy!

great post sophie! i’ve never heard of falafel before if i’m honest but this seems like a really interesting recipe. a really great way to switch up the classic burger for those who don’t eat meat! we don’t have a food processor at home so it would be challenging to make for me, i do wonder how it would taste if you put it on the outdoor grill. xx

These look delicious. I’d have them with roast vegetables like peppers,tomatoes aubergine, courgette all stuffed into a pitta bread with some fresh rocket and some homemade vegan mayonnaise 🙂

I’ve actually never had a falafel, so I am not sure how I would serve it but this sounds really amazing and I would try it for sure.
I enjoy falafel and Italian food so this recipe sounds great to me. I’ve probably serve them in burger buns or with some sweet potatoe fries.
