
Hi guys, today’s recipe is my latest in my Strictly Seasonal series and I’m going to start with an apology. This post is cheating ever so slightly, it’s for chickpea stuffed sweet potatoes. Sweet potatoes hit peak season from late October to early January. That sort of makes them more autumnal than a winter vegetable, but still sort of in season? However, this recipe is also served on a huge bed of kale which is definitely in season, so I’m redeeming myself.

Those of you with sharp attention spans may realise that you’ve seen photos of this dish before. I’ve used it in a blog post before and it was posted on my food Instagram a while back. There’s a couple of reasons for this, this dish is really easy to make and takes no attention whatsoever so it’s a great one to just throw in the oven. It also fits in really well with my current diet.
Nutrition
Sweet potatoes contain very high amounts of vitamin A, a good amount of B6, they’re high fibre and contain a small amount of iron and vitamin C too. Kale is also very high in vitamin A, vitamin C. A serving for this recipe gives you 15% of your daily required calcium and B6 intake and just under 10% of your daily intake of iron. You may remember from my hair growth post that I’m currently trying to eat as much (within reason) iron, protein, B vitamins, vitamins A & C to help my eyelashes grow back. So, this recipe fits into my life very well at the moment.
It’s healthy, nutritious, easy and fairly cheap too.

For this recipe, I like to keep things simple. I only dress my kale with olive oil and roast my chickpeas in whatever I feel like on the day. On this particular day, that was just a little chilli powder, but paprika, rosemary or simply salt and pepper also works well. To add some more healthy fats, add some toasted seeds before serving.
This recipe is dairy free, gluten free, vegan, nut free and soy free.

Chickpea Stuffed Sweet Potatoes
Ingredients
Potatoes
- 2 large sweet potatoes halved
- 1 tbsp olive oil
Chickpeas
- 1 can chickpeas drained and rinsed
- 1 tsp chilli powder or other seasoning of choice
- Pinch of salt
To serve
- 200 g kale
- 1 tbsp olive oil
- 1 tbsp free from pesto optional
- 1 tbsp hummus + 1 tbsp water optional
Instructions

Preheat oven to 200°c and grease the open side of the sweet potatoes with the olive oil. Lay the sweet potatoes flat on the baking tray then using a sharp knife or fork, pierce the outside edge of each a few times. Place the baking tray on the top shelf of the oven for 40 minutes, time may vary depending on the size of the potatoes.

Evenly coat the chickpeas in seasoning, place on a separate baking tray and set aside. When sweet potatoes have approximately 25 minutes remaining, place the baking tray on the middle shelf.

Add kale to a large bowl and gently massage, dry, until it softens. Then massage in the olive oil and split the kale into two bowls/ plates ready for serving.

If making the hummus dressing, add the humus and water to a small ramakin and stir thoroughly to thin the hummus. Add more water, if necessary, to reach your desired consistency.

When chickpeas and sweet potatoes are ready, use a spatula to place two halves in each bowl. Lightly mash the centre of the sweet potatoes with a fork, just to make it easier for the chickpeas to stick, don’t fully mash. Spread a light layer of pesto over each sweet potato then add pour chickpeas over the top. Drizzle the hummus dressing over (if using) to finish.
Serve and enjoy!

Sounds like a tasty but simple dish! I love sweet potatoes so I’m sure I’d love this. When I’m in a rush I have a go to recipe of fresh linguine with some creamy sauce .. perhaps not the healthiest but it tastes good haha

ohh this is an absolutely lovely recipe, my brother would be obsessed with this. he loves sweet potatoes, he comes back from a business trip tonight so maybe i’ll surprise him with this being made for him! i’m pretty awful when it comes to not feeling like cooking, i’ll usually just throw a tv dinner into the oven and call it a day. not very nutrious but usually i have dinner with my family so those tv dinners don’t happen TOOO often. x
