
Now I don’t want anyone to be alarmed by this, but the base of this recipe is chickpeas. Rather than a typical brownie, heavy and a little stodgy (in the best way), these blondies are more of a light bite. And while I’m not pretending these blondies are the healthiest thing in the world, they do have some health boosting ingredients in them so you don’t have to feel too guilty.
Made with chickpeas, flaxseed and almonds these are the perfect snack giving a little boost of protein, healthy fat and omega 3 too!
Oh and for anyone who, like my mum, thinks ‘I don’t know how I feel about a savoury cake’, they’re not savoury at all. And you can’t taste the chickpeas, promise.

These blondies are vegan, milk free, gluten free, paleo and can be nut free.

Cook time: 40
Serves 8
Ingredients:
- 1 can chickpeas (approx. 220g)
- 1/3 cup light brown sugar
- 1/3 caster sugar
- 3 flax eggs (3 tbsp ground flaxseed, 9 tbsp water)
- 3 tbsp vegetable oil of choice (I used sunflower)
- 1tsp vanilla extract
- 1/2 tsp baking powder
- 1/3 cup flaked or ground almonds
- 1/3 cup blanched almonds
Method:
- Mix flax eggs in a separate dish and set aside, leaving time for the seeds to absorb the water.
- Preheat the oven at 170°c
- Drain and rinse chickpeas, then place in a food processor, pulse until it has a puree texture.
- Pour chickpeas into a bowl and mix in remaining dry ingredients other than nuts.
- Then add the wet ingredients to the bowl, including the flax eggs. Stir until everything is thoroughly combined.
- Now mix in the nuts. If you want to make the recipe nut free, replace the almonds with seeds or chocolate chips.
- Line baking dish with greaseproof paper and bake for 40 minutes.
- Remove from oven and leave to cool for at least 10 minutes before serving.

NOMMM!! These look so good! I’d be worried I’d be tempted to eat them so breakfast! But honestly, they’re probably way better than 95% or granola bars…
I can confirm I have eaten these for breakfast and have never regretted it. The only ‘bad’ thing for breakfast in there is the sugar but as you said, you’d get that in most granola bars or cereals anyway so on balance there’s nothing too terrible. I like a little sugar boost on a morning anyway usually! x
