

I made some S’mores cookies! The same week, I bought a sugar free granola in my weekly shop. Only one of the above events was a mistake and I’m sure you know I don’t mean the cookies. But those two things are related because my deliciously chewy cookies had leftover supplies and brought my great joy that my cardboard granola was not. So, I decided to make use my leftovers to try and make a s’mores granola recipe.
The clusters are chewy with the half melted marshmallows, sweet from the chocolate chips with a soft nutty undertone from the peanut butter used to help form the clusters. If this was a cereal, it would be the one your 5 year old begs for in the supermarket when you’re trying to upsell the All Bran.
Which is quite ironic seeing how granola is more often than not sold as a healthier option.

What are S’mores?
Between the granola and the cookies, I’ve become somewhat obsessed with smores as a flavour recently, which is odd considering that’s not something we really have here in the UK. For any of my home readers not really sure what S’mores means as a flavour. S’mores are basically melted marshmallows and chocolate between two graham crackers. We don’t have graham crackers here in the UK, but they’re a neutral plain base. I looked up what the closest thing we have here is, and apparently the most similar thing is our humble Digestive. So, the flavour I’m currently obsessed with is basically something sweet with marshmallows, chocolate and something crunchy, which works perfectly for this granola recipe.

Nutritional Information
Each serving of this granola provides 5g of protein and 3.5g of fibre. And 13g of sugar, but we don’t need to dwell on that.
This recipe does contain 1.5mg of iron per serving, which is roughly a sixth of the recommended amount for men, and women over 50. Although that’s only about 7-8% of the RDA for women between 18 and 50.
S’mores Granola Recipe
This deliciously sweet and chewy granola recipe is a delight for anyone who has a sweet tooth. The oats are high in fibre, making them a slower release that helps combat the instant sugar rush from this recipe a little. And I used my old faithful DIY date syrup for this rather than adding yet more refined sugar to the mix.
I’ve specified mini marshmallows down below and it’s important that they aren’t swapped for full sized ones, unless you chop them first. The mini marshmallows are important because they melt down perfectly to combine the granola clusters and keep them together when the granola cools again. Larger ones may just leave a blob of sticky melted sugary goo on your baking tray.


S’mores Granola Recipe
Ingredients
- 75 g pitted dates
- 100 ml water
- 50 g mini vegan marshmallows
- 30 g chocolate chips
- 2 cups oats
- 1 tsp cinnamon optional
- Dash of vanilla extract
Instructions

Combine all dry ingredients other than the dates in a large mixing bowl then stir in the peanut butter. Don’t worry if it doesn’t fully combine, the mixture will loosen with the next step.

Blend the dates and water together then transfer the liquid to a small saucepan. On a low heat, warm the date mixture through for a few minutes until lukewarm. Stir regularly and do not allow to boil. Stir in the vanilla extract.

Once warm, pour the wet ingredients over the dry ingredients and stir until fully combined.

Spread mixture in a thin, even layer over a baking tray (you may need two). Place in the centre of the oven for 20-25 minutes until granola is golden brown and crunchy.

Leave to cool before serving to ensure the marshmallows have set again.

This sounds so delicious! It’s interesting to me that you don’t have graham crackers in the UK. They are a bit sweet, usually as well. I’m not sure if a Digestive is sweet or not. S’mores with granola sounds like a fun treat for a road trip. I will have to try it. Thank you!
