
As I said at the start of this year’s Vegmas series, I’m trying to focus more on smaller servings in case there are less people around the table this year. For the last couple of years my main course has been a loaf or wellington, this year I’m keeping it simple with this shiitake nut patties recipe.
This is a little bit of a throwback for me. I spent the months leading up to my first vegan Christmas looking for smaller serving options as I knew I’d be the only one eating it, and trying all sorts of combinations so my first vegan Christmas wasn’t a disappointment.
If you’re in that kind of situation, this recipe is ideal. It only makes two patties, which is great if you’re only cooking for one. But obviously, it can easily be multiplied to serve more. The recipe itself only takes one pan and a food processor to prep, so you won’t need much time or space in the kitchen if someone else is trying to prep a turkey. Patties are obviously a lot smaller than a loaf, so you won’t need much extra space in the oven for yours, and they only take 25 minutes to cook. This is exactly the kind of recipe that I was looking for 5 years ago when I was trying not to be difficult.
However, if this sounds like you, be difficult. You’re as entitled to enjoy your food as everyone else in the kitchen. It’s their problem if they can’t respect you have different requirements, not yours.

Nutritional Information
This recipe is high fat, but that’s only because two of the main ingredients are nuts – it’s full of healthy fats. Each patty contains 7g of protein (not much) and 5g of fibre. Due to the healthy fats, each patty provides over 100% of the recommended amount of omega 3 and 86% of the recommended daily amount of omega 6.
They each contain 20-25% of the RDA of vitamins B1, B3, B5 and B6, and roughly a third of the recommended daily amount of zinc.
Shiitake Nut Patties Recipe
As you guys know, I love the lentil loaf that’s been the base of my Vegmas mains recipe for the last two years now. And I wanted to include elements of that recipe in this one, I love what the red wine adds to that, and the rich flavour the tamari adds to the vegetables, so you can see a couple of similarities in this recipe even though there isn’t a lentil in sight.
This recipe is gluten free, dairy free and vegan. It does contain soy and nuts.

Shiitake Nut Patties Recipe
Ingredients
- 120 g shiitake mushrooms
- A few sprays of 1kcal fry spray
- 1 tbsp tamari
- Pinch of chilli powder
- ⅛ cup red wine
- 1 tsp dried thyme
- ½ tsp rosemary
- ½ cup pecans
- ¼ cup walnut pieces
Instructions

Preheat oven to 190°c and line a baking tray with greaseproof paper.

Place a saucepan on medium heat and add a few sprays of fry spray. Once hot, add the mushrooms. Cook for roughly 3 minutes then add the dried thyme, rosemary and chilli powder. Continue to cook for a further 2-3 minutes, then reduce to a low heat. Add the tamari and cook for 1 minute, stirring regularly, then add the red wine and leave on a low simmer for 5 minutes.

Add the nuts to a food processor, then add the contents of the pan and pulse for a minute or two. You may need to scrape the sides down. Then mix on high for a further minute or so. Remove mix from the food processor and split into two equal serving and shape into patties with your hands.

Place on a baking tray and cook in the centre of the oven for 25 minutes.
Serve and enjoy!

These sound incredible! My husband and I usually head north to visit my family for the holidays, so we don’t really control the menu. That being said, if we’re going to be staying home this year due to the lockdown, why not try some new recipes? Right? I am saving this so that I can easily refer back to it.
It is so thoughtful of you to be focusing on smaller portions! I think it will be smaller gatherings for a lot of people this year and it is so nice not to have to down-size recipes meant to serve crowds.
