
Now, I know I said in my ‘What’s In Season’ post that I loved parsnips and squash so you’d see a lot of them this season. What I didn’t anticipate was that you’d be seeing them all the time in soup recipes. I’m taking a break from pumpkins this week (don’t worry – they’re coming back soon) and sharing this parsnip and caramelised onion soup recipe. Now the seasons have definitely changed, it’s the perfect time to curl up with a bowl of soup.
Seasonal Ingredients
Parsnips are the main ingredient today and although they’re available most of the year, they’re an autumn/ winter vegetable. They’re at their best from October to February.
Nutritional Information
As this soup is very vegetable heavy, it’s a high fibre dish with 11.5g per serving. Parsnips are high in vitamin C and K, coming in at just under 50% of the RDA of both per serving. This soup also contains just over a third of the RDA of folate and between 20-25% of B1, B2, B5 and B6.
Despite being vitamin dense, this soup doesn’t contain a protein source, so adding some roasted chickpeas or serving with a protein dense seeded bread would be a good idea for a balanced meal.
Parsnip & Caramelised Onion Soup Recipe
This soup is really easy to make, with only a handful of ingredients and minimal steps. The roasted parsnips make this dish thick and hearty, while the caramelised onion and balsamic vinegar add a hint of sweetness.
I found that the amount of time that my onions needed to caramelise was around the same amount of time that the parsnips took to roast too, so the dish isn’t complicated at all in terms of tasks and timings.

Parsnip & Caramelised Onion Soup Recipe
Ingredients
Parsnips
- 4 medium parsnips chopped into small cubes
- 1 tbsp olive oil
- 1 tbsp maple syrup
- 1 tsp dried thyme
Onions
- 2 medium red onions thinly sliced
- 1 ½ tsp olive oil
- 2 tbsp balsamic vinegar
To Blend
- 3-4 cups vegetable stock
- Black pepper to taste
Instructions

Preheat your oven to 190°c

Add the chopped parsnips to a large bowl with the maple syrup, thyme and olive oil and mix until the parsnips are evenly coated.

Transfer the coated parsnips to a baking tray and place in the oven for approximately 35 minutes until cooked but not too crispy.

Meanwhile, start the onions. Use a wide, thick-bottomed pan for maximum pan contact with the onions. Coat the bottom of the pan with olive oil. Heat the pan on medium high heat. When the oil is hot, add the onion slices and stir to coat the onions with the oil. Spread the onions out evenly over the pan and let cook, stirring occasionally.

Reduce to a medium low heat and check back to stir them every 5 minutes.

Let them cook for around 30 minutes. As soon as the onions start sticking to the pan, let them stick a little and brown, but then stir them before they burn.

After the 30 minutes are up, remove from the heat and stir in the balsamic vinegar. Once the vinegar is fully combined in the onions, remove a small amount of the caramelised onion to serve as garnish.

When the parsnips and onions are both ready, blend with 3-4 cups of vegetable stock depending on how thick you like your soups to be. I used a little over 3 cups for mine. Add black pepper to taste.

Once blended, serve in bowls and add the previously set aside caramelised onion.
Serve and enjoy!

This actually sounds really good! I have this weird aversion to parsnips, but my boyfriend absolutely loves his “white carrots” as he calls them. I love the added caramelized onions to this. It seems like a super warm and cozy soup – perfect for the chilly weather!

honestly this probably wouldn’t be a soup i would eat mainly because i’m almost positive we don’t sell parsnips in america. i’ve never seen them in the grocery store if we do lol! this is definitely a very fall appropriate meal though! i’m curious now on if we sell parsnips, i’ll have to check the grocery store next time I go! great recipe sophie! xx

Don’t think I’ve had anything with parsnips in it or had it as one of the main ingredients to a good I’ve eaten before!! Caramelized onions are so amazing so I feel anything with that in it has to be really good lol!! I’ll have to try it, I can imagine it smells and tastes delicious.

Yummy, yummy! I have temporarily left fall behind as I am Tucson visiting my aunt but my mind wanders home and I am thinking of how warming this would be. Even here, it is tempting to make it. There are lovely parsnips at the organic grocery here.

SOUP YES! Parsnips are great and I feel like they never get the recognition they deserve so yay for them being in this recipe! I do love having a bowl of soup when it gets colder. I love parsnips and caramelised onion so I’m sure I’d enjoy this. I like the idea of a vegetable soup with a bit of sweetness added to it. I had some soup on the Sunday just gone and it made me feel all warm and cosy, I’d be happy to have soup every day for lunch for the whole of Autumn and Winter hehe.
