Ingredient Choices & Substitutions
You can mix up your cereal to be whatever you want but use something plain rather than something really sweet or chocolatey.
I used 2 and 2/3 cups wholegrain loops and 1/3 cup quinoa puffs. But you can use rice puffs, quinoa puffs, flakes or loops or any combination thereof.
To make them nut free you can switch the nut butter for wow butter.
The protein powder is optional, but if you’re including some either use something peanut butter (PB, peanut butter chocolate or PB cookie) or plain vanilla so the flavours don’t conflict too much.
How to store and keep
They don’t need refrigerating or any fuss, just pop them in any airtight container – Tupperware or food bag and they’ll keep for 7-10 days before they start to soften. Top tip: if they start to soften slightly before you’ve finished them, they may crumble slightly as you chop them. If this happens, serve them with your favourite dairy free milk or yoghurt and you’ve got a peanut butter protein cluster cereal.

GF Vegan Cereal Bars Recipe
Ingredients
- 3 cups plain GF Vegan Cereal
- ⅔ cup Peanut Butter
- ½ cup maple syrup
- 3 tbsp vegan protein powder
- Pinch of salt
Instructions

Line a large dish with greaseproof paper.

Mix your cereal in a large mixing bowl. Stir in the salt and protein powder (if using).

Add the wet ingredients and work them in. It may take a while to fully work the peanut butter into the dry ingredients and ensure the protein powder is fully mixed (if using).

Transfer the mix to the lined dish and use a spatula to firmly press down and make the mix as compact as possible.

Place the dish in the fridge for a few hours to set before slicing.
