
I love a loaf recipe. You can switch them up to change flavours very easily, they’re simple to make, and as far as cakes go, they’re relatively easy to make a healthier version. Today’s foodie offering is a gluten free blueberry and lemon loaf but can easily be switched up to a slightly more seasonal option such as cranberry and orange.
Making a slightly healthier version means you can have a slice for dessert or even take it as breakfast on the go without the guilt. This version is deliberately low sugar but you can sweeten it up if you wish to make it more like a traditional cake.

This recipe is gluten free, dairy free, vegan and nut free (depending on the milk chosen).
Prep time: 10 minutes
Cook time: 30 minutes
Serves 8
Ingredients: 
- 200g (1.5 cups) buckwheat flour
- 125ml (0.5 cups) milk of choice
- 150g applesauce (0.75 cups)
- 4tbsp oil (coconut or sunflower will work best)
- 5 tbsp flaxseed + 4tbsp water
- 2tsp baking powder
- 2tsp apple cider vinegar
- 1tsp bicarbonate of soda
- 1 cup blueberries (or cranberries), fresh or frozen
- 1 lemon (or 2tsp orange oil)
- 2tbsp + 1tsp brown sugar
Method
- Preheat oven to 180 degrees and line loaf tin with greaseproof paper.
- Mix flaxseed and water in a small dish and set aside.
- Mix the flour, baking powder and 2tbsp sugar in a large bowl.
- Pour the milk, oil and applesauce into a saucepan on a low heat. Leave until the milk is warm but not boiling and the oil has melted (if using coconut) then set aside.
- In another small dish mix the bicarbonate of soda and apple cider vinegar.
- Add the wet ingredients, flax mixture and soda mixture to the large bowl with the dry ingredients along with the juice and zest of half a lemon and the blueberries.
- Very gently fold the mixture to combine everything, being too rough will make the mixture tough and heavy.
- Pour the mixture into the loaf tin and add the juice from a quarter of a lemon and the remaining teaspoon of sugar to the top.
- Place in the centre of the oven and bake for approximately 30 minutes.
- Once cooked, pierce the top of the loaf a few times and add the remaining juice from a quarter of a lemon.
- Set aside for at least 10 minutes to cool before slicing.
