Hi everyone, today’s recipe is a bit different; this is probably the most unhealthy thing you’ll see me make. It’s a classic, lemon drizzle slices. I’ve been thinking about vegan recipes in general and there’s often a stigma. While this is changing, many people still believe just because something is vegan it will either taste bad or taste healthy, which the person often associates with tasting bad or bland anyway. As someone who tries to create healthy recipes, that stigma will often be there.
The challenge creating vegan food isn’t making a healthier cake or biscuit, that part is quite simple. The challenging part is creating something that tastes exactly the same as the original version. Which is why we’re making lemon cake today. This isn’t low fat, low sugar or remotely healthy, but it tastes exactly like the version you’d find in your local coffee shop, if not better.

This recipe is dairy free, vegan, soy free and nut free
Prep time: 15 minutes
Cook time: Approx. 30 minutes
Serves: 6 slices
Ingredients
For the sponge:
- 125g dairy free butter
- 100g brown sugar
- 150g self raising flour
- Juice of 2 lemons + warm water to make a total of 100ml
- Zest of one lemon
- 1tbsp baking powder
For the icing:
- 75g icing sugar
- Juice of one lemon
Method
- First, preheat oven to 170 degrees, line a loaf tin.
- Next, place vegan margarine, sugar and lemon zest into a mixing bowl and mix.
- Top up the lemon juice with warm water to 100ml in total. Let liquid drizzle into mixture while beating until creamy.
- Then sift flour and baking powder and fold under mixture with a spatula.
- Fill with loaf tin cake mixture and bake for 30 minutes.
- Let cool for 10 minutes then cut into slices.
- Finally, mix the icing sugar with zest and lemon juice. Spread over cake.

These look incredible! I don’t think I’ll ever go Vegan but I definitely want to cut down my consumption of animal products. I always assumed I wouldn’t be able to do that where baked gooda are concerned but clearly I was wrong! Will definitely be trying out the recipe!

YUM! These look absolutely incredible, and the recipe is so straightforward as well, without a lot of the more obscure ingredients that you often find need to go into vegan cakes! In fact, I have a lot of these things in my cupboard already, so you bet that I’ll be recreating this at the weekend!
