
It’s time for another installment of my Plant Sourced series. Today’s high protein vegan recipe is a really simple stir fry that takes less than 10 minutes to throw together. The focus is on the protein sources so the seasoning is simple but still tasty.
Protein Sources
As with my last recipe, the protein comes from a couple of different sources to get a variety of vitamins. The bulk of the protein comes from the black bean noodles and edamame, with a smaller helping hand from the other green vegetables in the dish.
In total, this recipe contains 42g of protein per serving. 11.1g comes from the edamame, 23g from the black bean noodles.

Nutritional Information
As well as being high protein, this recipe is also high in vitamins A, C and K, containing over the full amount of the RDA for each. Due to the high amount of the vegetables and beans, it’s also very fibre rich, containing 21.4g (86% RDA).
High Protein Vegan Stir Fry Recipe
The vast majority of the protein in this recipe comes from the edamame and black bean noodles, so you can sub the vegetables for anything else you’d prefer if you want to mix it up a little. But I opted for these ones as I prefer my stir fries to be on the crunchier side, and this vegetable combination is the perfect blend of freshness and sweetness. If you’d prefer your vegetables to be a little less crunchy, add another 2 minutes to the cooking time.

This recipe is gluten free, dairy free, nut free and vegan. It does contain soy.

High Protein Vegan Stir Fry Recipe
Quick & easy high protein dinner recipe with a wide variety of vitamins and minerals.
Ingredients
- 1 tbsp sunflower oil or some fry spray
- ½ tbsp ginger paste
- 4 cloves garlic finely chopped
- ½ red onion thinly sliced
- 100 g tenderstem broccoli
- ½ cup butternut squash chopped into thin slivers
- 1 red/ orange pepper roughly chopped
- 1 bag beansprouts
- 1 cup edamame frozen is fine
- 1 cup chopped spinach/ kale
- Juice of one lemon
- Generous amount of black pepper
- Chilli flakes to taste
- 100 g black bean noodles
Instructions

Heat a wok on a medium-high heat. Once hot, add the garlic and onion and cook for 2-3 minutes. Then stir in the garlic paste, black pepper and chilli flakes and cook for a further minute.

Now add the broccoli, butternut squash and pepper and cook for 2-3 minutes. If using frozen edamame add that now too. Add the black bean noodles to a pan of boiling water at the same time and cook for 4-6 minutes.

After the first vegetables have been cooking for 2-3 minutes, stir in the spinach/ kale and beansprouts. If using fresh edamame, add that at the same time. Cook for a further 2-3 minutes, stirring regularly.

Once the noodles are cooked, drain them and add them to the wok. Stir in the tamari and lemon juice, continue to stir and fully combine everything for one minute before serving.
Serve and enjoy!

I can’t say that I’ve ever tried a vegan stir fry recipe but yours really looks delicious. I’ve never tried a ginger paste either. I’ve always used fresh or ground ginger. I am looking forward to trying this recipe.
Never cooked with black bean noodles before but I love black beans and this is a great way to add extra protein to my meal. This stir fry looks so good and filling. Definitely trying!

I love stir fries! With tamari and sesame oil, the vegetables take on a new flavor. Rice is something I love to eat the veggies with, or I mix it into the pan. 🙂

Stir fry is one of my favorite go-to meals! I’ve tried having vegetarian ones but never really tried vegan – would love to try this recipe out someday!

As someone who doesn’t love tofu, this is such a great idea. The black bean noodles are something I’ve not tried yet!
I love making Stir Fry, it’s best way to use all vegetables and get a super nutritious meal out of it! Even better is that you can save it for the next day as well. I’m not sure I’ve tried black beans noodles before surprisingly, I usually opt for the clear noodles (not sure what they’re called!) or the ones that similar to them but not clear. Crunchy Stir Fry is the best, if it’s too soft it’s a no from me so most definitely going to be following this recipe to a Tee! I just noticed this takes less than 10 minutes to put together wow wow wow this recipe is an actual gift, can’t wait to make it!

Stir fry’s are one of my favourite meals, they are so yummy and I find them quite filling and really healthy. I will say though that I am glad that this meal doesn’t contain tofo because that isn’t one of my favourites! X
