
For a long time now I’ve been a firm believer that all protein oats and pancakes recipes are disgusting. Yes, I said what I said, and yes, this is a protein oats recipe. When I decided to do this protein series, I wanted to try and find a way to prove myself wrong. At the end of the day, natural protein sources are the best in terms of getting more well rounded nutrition. But, if you’re in a hurry and looking for a boost in the morning, adding a protein powder is the easiest way. After several attempts, I can confirm that regular protein oats are still a firm no in my opinion, so I decided to try to make a protein baked oats recipe instead, and I finally made some progress.
I think the key to making this work is that there’s natural sweetness from the fruit so the artificial sweetness from the protein doesn’t become too overpowering. And when it’s baked the protein powder performs like a flour would, meaning this ends up tasting like a cake/ some sort of breakfast muffin and I’m here for it.

Protein
Per serving, without the added peanut butter, this recipe contains 27g of protein. 18-20g pf this will be from the protein powder, depending on your choice of brand and the rest comes in smaller amounts from the natural sources – chia seeds and the oats.

Nutritional Information
This recipe contains 12g of fibre which is just less than half of the recommended daily amount. As well as being high fibre, it contains 90% of your daily vitamin K (mostly from the chia seeds), your full daily amount of omega 3 (also from the chia seeds) and 15-20% of the RDA of iron, calcium, copper and magnesium.
Protein Baked Oats Recipe
A healthy, filling protein baked oats recipe with natural sugars and healthy fats to keep you sustained throughout the morning.
This recipe obviously takes longer to cook than a regular bowl of oats would, but once it’s in the oven it doesn’t need checking or anything added to it so you can leave it while you shower/ continue to get ready if you don’t have the time to spare.
Oh, and don’t be alarmed, it looks awful still in the dish. If it looks like you’ve made a mistake, you probably haven’t
This recipe is gluten free, dairy free, vegan. It can be nut and soy free depending on your milk choices.

Apple & Blueberry Protein Baked Oats Recipe
Ingredients
- 40 g GF oats
- 2 heaped tbsp applesauce
- ⅓ cup frozen blueberries
- 1 tbsp chia seeds
- ¾ scoop vanilla protein powder
- Approx ½ cup non-dairy milk I used vanilla soy - enough to mix in with the oats, so they’re fully coated with a tiny bit of excess.
- 1 tbsp Peanut butter (optional)
Instructions

Preheat oven to 180°c. Mix all of the ingredients other than the peanut butter in a bowl or oven friendly dish. Add the milk until you get the desired texture, then flatten the mix out a little bit so it’s no more than an inch thick across the base of the dish. Place in the oven and bake for 25 minutes. When it’s ready it will likely look like it’s going to be too dry on the top, but still moist in the centre/ underneath.

Scoop your baked oats into a bowl and add the peanut butter before serving (if using).
Serve and enjoy!

I was actually looking up new oatmeal recipes and this one sounds tasty! O have everything in my pantry to make this except applesauce but I have whole apples so I’ll just blend those up I can’t wait to try it out. I like the touch of peanut butter it’s so good on oatmeal!

No a fan of the texture myself, but these sound great for my husband as he’s looking for ideas to get more protein in his diet! Will have to bake them for him!
I’m not for baked oats. What I like to do if I have to do something fast is make a smoothie with oats, berries/fruit, spinach, protein powder and liquid.
It’s fast delicious and keeps you full for long
I’m not a fan of the texture of smoothies with oats in – it’s funny how we all have different preferences when it comes to this kind of thing. Yours sounds like a great healthy breakfast though!
