

I’m a sweet breakfast person, but unless you want to find the time to make a full stack of pancakes or bake something, I find that the options can get a little stale and boring. These baked breakfast ciabattas are a great breakfast option for those who want something a little bit different that’s still relatively simple.
It’s basically a fancier version of toast, but between the Greek style yoghurt and the nut butter, you get some protein and healthy fats, so it’s a fairly balanced breakfast option with very little fuss.
Nutritional Information
I made mine with the Schar ciabattas, so they’re what I’m using to calculate calories/ protein etc. But as this recipe is mainly using premade ingredients rather than fresh produce, use the following as a rough guide as content will vary from brand to brand.
Each serving contains 306 calories, 4.5g of fibre and 10g of protein, 15% of the recommended daily amount of vitamin E and a quarter of your daily calcium.
Substitutions
This recipe is obviously gluten free, but feel free to switch to any other bread base of your choice. Just make sure that whatever you pick isn’t too thin and can take the weight of the toppings without splitting.
The almond butter can be swapped for any other nut or seed butter of your choice, or some Wowbutter.

Baked Breakfast Ciabattas Recipe
A sweet and easy vegan and gluten free recipe option, really easy to prep and minimal effort to make. Sweet strawberry jam mixed with creamy nut butter and Greek style yoghurt, ready in less than 20 minutes.
This recipe is gluten free, dairy free, and vegan. The specific brand of bread I opted for does contain soy, but you can switch those for a BFree Baguette to make this recipe soy free too.

Baked Breakfast Ciabattas Recipe
Ingredients
- 1 GF vegan ciabatta
- 1 tsp vegan butter
- 200 g vegan Greek style yoghurt
- 1 heaped tbsp strawberry jam
- 1 tbsp almond butter
To serve:
- Sprinkle of granola or chopped nuts
Instructions

Preheat oven to 175c.

Lightly toast the ciabatta and cut each half in half again, then lightly butter the surface of each piece. Spread them evenly across a baking tin.

Top each of the pieces with the yoghurt, jam and nut butter, try to make it as even as possible, but allow some to fall on the base of the dish between them.

Place in the centre of the oven for 12-15 minutes until the jam has started to run slightly and the edges of the ciabattas are fully toasted.

Serve two pieces on a plate or bowl and drizzle with nuts or granola.
