
As you guys know, my Health Unwrapped ingredient of the month is nut butter this month, and today I’m sharing an almond butter and jam flapjack recipe. I wanted to make some flapjacks because I think they’re quite multi-purpose as far as bakes go. Â
Obviously, you can have a flapjack as a snack or sweeter treat, but with oats and nut butter, and the sweetness of jam, they sort of work as a grab and go breakfast too. Â

I’ve opted for almond butter for this batch as a more nutrient dense alternative to peanut butter, but you can use the same amount of any nut butter of your choice – cashew, peanut, hazelnut, whatever you want to use. Â
The recipe below specifies a brand of plant butter, you don’t need to use that specific one, but this recipe does use a vegan butter alternative, as in a solid block in paper, not a vegan margarine alternative. It will work if you’re using something like Vitalite, but I can’t promise the texture will yield the same results. I mentioned the Flora plant specifically as that’s the only big brand/ available everywhere butter alternative I’m aware of in the UK, but use any alternative of your choice if you know of any others. Â

Nutritional Information Â
Each flapjack provides 6.3g protein, 4g of fibre and 284 calories. In terms of vitamins and minerals, each serving provides a third of your daily vitamin E, 20% of your daily B2, 10% of your daily calcium and a quarter of your daily omega 6.Â
Almond Butter Jam Flapjacks RecipeÂ
A rich and gooey soft bake almond butter and jam flapjack recipe with just 5 ingredients. Â
This recipe is gluten free, dairy free, soy free and vegan. It does contain nuts. Â

Almond Butter Jam Flapjacks Recipe
Ingredients
- 5 tbsp salted Flora Plant butter
- 225 g almond butter
- 8 tbsp strawberry or raspberry jam I used strawberry
- 80 g light brown sugar
- 200 g GF rolled oats approx. 2 cups
Instructions

Heat the oven to 180C/ gas 4. Line the base and sides of a 20cm square cake tin with baking parchment.

Put 3 tbsp each of the nut butter and jam in a small bowl and set aside. We’re drizzling this over the flapjacks later, I didn’t mind if mine mixed in the bowl, but put them in separate dishes if you want to drizzle them separately. Tip the remaining peanut butter, the rest of the jam and the butter and sugar into a pan on medium heat and stir until everything has melted together. Quickly stir in the oats, then set aside and leave to cool for 5 mins.

Spoon the mixture into the prepared cake tin and gently press down with your hands or the back of a metal spoon. Dot over the reserved peanut butter and jam, then bake for 30 mins or until golden brown. Leave to cool completely in the tin, then turn out onto a board and cut into squares. 30 minutes makes a slightly softer bake, bake for 35 minutes for a firmer/ slightly crisp flapjack.

I used to always have almond butter. I would tot try this recipe. I love almond butter.

Oats make any kind of bar just perfect for me, so I love that these combine the rich flavor of almond butter with the nutty, tasty oat texture, luscious brown sugar, and the timeless, sweet taste of berry jam!

These sound absolutely amazing! I think almond butter is my favourite nut butter of all and flapjacks hit the spot every time, so I will 100% be making these. The addition of strawberry jam to these flapjacks is such a smart move. You nailed it with this recipe and I’d definitely eat them for breakfast as they’d be really filling1

These flapjacks look so yummy! I can’t remember the last time I’ve had flapjacks, but I need to change that now! It’s great that there are not that many ingredients & they can be made vegan!
