

Some of you may have seen photos of this red velvet loaf recipe before. It was my mum’s birthday last month, my original planned cake for her was a complete disaster. This was round 2, and as you can hopefully see, this wasn’t a flop at all.
With all of my prep for this month underway, I didn’t get time to get this up last month as planned, so it got rolled into my Recipe A Day May list instead.
Why Red Velvet?
Because it’s one of the best cake options out there, I’m not accepting arguments there, and I don’t think I’ve had red velvet once in all of the years I’ve been vegan, which will be 6 next month. If I have, it wasn’t good enough to remember, and that needed fixing.
Frosting
I’ve included my recipe for the frosting, and it’s great. But I feel the need to add a public service announcement that the Betty Crocker Cream Cheese icing is vegan friendly. I always have an emergency tub on standby if I ever have a lot of baking to do. It’s easy in a pinch, and there’s no shame at all. And vegan cream cheese is expensive, if something goes wrong or you run out, that stuff works as a great recovery plan.

Nutritional Information
Each slice contains 272 calories, 1.5g of fibre, 1.5g of protein, 10.7g of fat, 3.1g of which are saturated fat.
And each slice provides an eighth of your daily vitamin E.
GF Vegan Red Velvet Loaf Recipe
A delicious vegan red velvet loaf recipe, with a vegan cream cheese style frosting so good no one will know that there’s no dairy.
Please note that the vast majority of food colourings contain animal product and are therefore not vegan, check your labels before serving.
This recipe is gluten free, dairy free, and vegan. It does contain soy, but you can sub the non-dairy milk for another alternative.

GF Vegan Red Velvet Loaf Recipe
Ingredients
- ¾ cup GF oat flour
- ¼ cup GF bread flour
- ¼ cup cacao powder
- 1 cup light brown sugar
- ¼ TSP salt
- 1 tsp baking powder
- 3 tablespoons red food colouring
- 2 tsps vanilla extract
- 1 tbsp apple cider vinegar
- ¾ cup soy milk
- ¼ cup sunflower oil
Cream cheese frosting
- 1/2 cup vegan butter slightly softened to room temperature, (8 tablespoons)
- 225 g vegan cream cheese
- 1 teaspoon pure vanilla extract
- 4 cups powdered sugar more if needed
Instructions
Loaf

Preheat the oven to 180°F (350°C). Line a loaf tin with greaseproof paper.

Sift both flours and cacao powder into a mixing bowl and add the sugar, baking soda and salt and mix in.

Add in the soy milk, oil, vinegar, and red food colouring until well combined and no large lumps remain (tiny lumps are okay, but not too many).

Pour the batter into the loaf tin and bake for 45-50 minutes until a toothpick comes out clean.

Let the loaf cool for a few minutes before removing from the tin and placing on a cooling rack to cool completely before frosting.

When the loaf has cooled frost the loaf.
Frosting

In a large mixing bowl, add the slightly softened vegan butter and beat until creamy and smooth.

Drain any extra liquid in the vegan cream cheese container, add it to the bowl and beat for 30 seconds to 1 minute to combine with the butter. Do not over beat at this point, or your frosting may be too runny.

Beat in the vanilla to combine. Gradually add the powdered sugar, 1 cup at a time, until thick and spreadable. I used 4 cups, but you may need a little more.

I used this recipe for the first time last night and I think I got something mixed because it most definitely didn’t come out the way it did in the picture. Also, the recipe calls for cacao powder, but the instructions state to use COCOA powder, which is completely different. Which one is supposed to be used?
