Ingredients

  • ¾ cup GF oat flour
  • ¼ cup GF bread flour
  • ¼ cup cacao powder
  • 1 cup light brown sugar
  • ¼ TSP salt
  • 1 tsp baking powder
  • 3 tablespoons red food colouring
  • 2 tsps vanilla extract
  • 1 tbsp apple cider vinegar
  • ¾ cup soy milk
  • ¼ cup sunflower oil

Cream cheese frosting

  • 1/2 cup vegan butter slightly softened to room temperature, (8 tablespoons)
  • 225 g vegan cream cheese
  • 1 teaspoon pure vanilla extract
  • 4 cups powdered sugar more if needed

Instructions

Loaf

  1. Preheat the oven to 180°F (350°C). Line a loaf tin with greaseproof paper.
  2. Sift both flours and cacao powder into a mixing bowl and add the sugar, baking soda and salt and mix in.

  3. Add in the soy milk, oil, vinegar, and red food colouring until well combined and no large lumps remain (tiny lumps are okay, but not too many).

  4. Pour the batter into the loaf tin and bake for 45-50 minutes until a toothpick comes out clean.
  5. Let the loaf cool for a few minutes before removing from the tin and placing on a cooling rack to cool completely before frosting.
  6. When the loaf has cooled frost the loaf.

Frosting

  1. In a large mixing bowl, add the slightly softened vegan butter and beat until creamy and smooth.
  2. Drain any extra liquid in the vegan cream cheese container, add it to the bowl and beat for 30 seconds to 1 minute to combine with the butter. Do not over beat at this point, or your frosting may be too runny.
  3. Beat in the vanilla to combine. Gradually add the powdered sugar, 1 cup at a time, until thick and spreadable. I used 4 cups, but you may need a little more.
