

So, we’ve been using tortillas as a quick pizza base for a long time now. It’s great, it’s quick, it’s not that heavy. For those who like a lighter lunch or are trying to watch their carb intakes, it’s a great choice. But despite the base being a Mexican essential, I don’t see Mexican inspired pizzas that often, so I decided to create this Mexican tortilla pizza recipe with a smoky pizza sauce and fajita style vegetables.
I’ve gone for a double thickness tortilla base here so you can actually pick up the pizza and eat it as a slice. One tortilla isn’t strong enough if you want to add a good range of toppings, this way you have a choice to eat it with your hands or with a knife and fork.

Ingredient Choices
You’ll notice down below that I’m talking about vegan cheese and regular readers will know that it’s not something I typically eat due to the coconut content. You can make these without vegan cheese if you’d prefer, but the double tortilla base will likely slide around a bit.
If I am using a vegan cheese, my favourite is MozzaRisella, it’s a rice based mozzarella alternative, the one they use at both Zizzi’s and Pizza Express here in the UK. It does still contain coconut oil, but as it’s rice based, it’s a much smaller amount which means I can eat a little bit here and there without my skin reacting to it. unfortunately, it isn’t available from mainstream supermarkets, it’s most easily available from somewhere like Planet Organic or The Vegan Kind Supermarket.
Nutritional Information
The nutritional information is for the pizza without any vegan cheese as there’s no specified amount in the recipe below.
Each pizza contains 9g of both fibre and protein. The tortillas themselves don’t contain much in the way of vitamins and minerals, so the majority of the nutritional value in this recipe comes from the toppings.
Per serving, each pizza contains 80% of your daily vitamin C, 40% of your daily vitamin A and 20% of your daily B6.

An easy lunchtime Mexican tortilla pizza recipe with smoky pizza sauce and fajita style vegetables. Ready in less than 15 minutes and perfect for quick WFH lunches.


Mexican Tortilla Pizza Recipe
Ingredients
- 2 to rtilla wraps
- 30 g chestnut mushrooms finely chopped
- ¼ large pepper sliced
- ½ medium red onion thinly sliced
- 3 heaped tbsp tomato puree
- ½ tsp smoked paprika x 2
- ¼ tsp ground cumin
- ¼ tsp cayenne pepper
- Pinch of chilli powder
- 1 tsp sunflower oil or few sprays of fry spray
- Vegan cheese to taste
Instructions

Preheat oven to 200°c.

While the oven is warming up, heat a saucepan on medium heat. Once hot, add the oil or fry spray, then add the onion and cook for 2-3 minutes. Then add one of the servings of smoked paprika and chilli powder, cook for 1 minute, then add the sliced pepper and chopped mushrooms and cook for a further 4-5 minutes. Set aside for a minute.

Mix the remaining ½ tsp of smoked paprika, cayenne pepper and cumin in with the tomato puree.

Take one of the tortillas and spread one tbsp of the tomato puree mix across it, then add a light sprinkle of vegan cheese (if using). Place the remaining tortilla on top, spread over the remaining puree mix, your cooked vegetables and the amount of vegan cheese you’re happy with.

Place the tortilla pizza directly on the shelf of your oven, with a tray on the shelf below it and cook for 6-8 minutes until the edges have started to crisp up and your cheese has melted (if using).
Serve and enjoy!
This recipe is gluten free, dairy free, soy free and vegan. It may contain nuts depending on your choice of vegan cheese.

So, yah, I am hungry over here and I could not even tell there was no meat in this, those mushrooms are so juicy! I love the flavors Mexicans use in their tortillas and enchiladas and, on this toasted tortilla wrap, everything looks moist and packed with nuances to burst on the tongue.
