
I saw a Pinterest video a very long time ago of a three layer brownie stack and immediately knew I needed to make something like that to suit my dietary requirements. After I’d uhmed and ahed for a very long time about the flavour I wanted to make, I eventually decided it would be a great bake for Christmas. I already had my orange brownies on my recipe list, so opted to make this three layer vegan mint chocolate brownies recipe instead. I mean, Christmas is either orange or mint, right?
Cooking time
Just a warning, this recipe does take a very long time. It’s a mint chocolate brownie, topped with mint buttercream, then a ganache to finish it off. So, the brownies need to be completely cool before you add the buttercream, and then the ganache needs to cool slightly before you pour it over the buttercream too. None of the layers individually take long to make, but this dish does take a while to fully assemble when you factor in the necessary cooling time.

Ingredients & Servings
As you can probably imagine, this dish is very rich. Originally, I made a recipe with similar amounts to the orange brownies, which typically serves 12. But with the added layers on top of that, I opted to slice these into 16 servings per recipe.
I’m aware that’s a lot, especially during Covid times and the lack of gatherings, so you may want to make a smaller batch unless you live in a larger household, or you all really love mint chocolate, and/ or brownies.
This recipe uses GF self raising flour, and if you’ve read my previous brownie recipes, you’ll know that I typically opt for a mix of self raising and oat. The decision to use self raising alone in this one is down to the texture. SR is typically a little bit drier. I know that sounds like a negative, but in this instance that helps the brownie support the layers on top, while still being easy to slice without them collapsing into each other. And please note, I said drier, not dry.

Three Layer GF Vegan Mint Chocolate Brownies Recipe
A decadent vegan three layer mint chocolate brownies recipe, rich and gooey with a melt in the mouth ganache.
This recipe is gluten free, dairy free, nut free and vegan. It does contain soy.


GF Vegan Three Layer Mint Chocolate Brownies Recipe
Ingredients
Brownies
- 170 g GF self raising flour
- 175 g golden caster sugar
- 180 g vegan mint chocolate or a mix of mint and dark
- 4 tbsp sunflower oil
- 4 tbsp cocoa powder
- 1 cup chocolate soy milk
- ½ tsp peppermint extract add more if you’re only using dark chocolate
Mint Buttercream
- ½ cup vegan butter softened- I used Flora Plant
- 2 cups icing sugar
- Green food colouring - I used about half a tube
- 1 tbsp water
- Dash of peppermint extract
Ganache
- 160 g dark chocolate chips
- 3 tbsp vegan butter
Instructions
Brownies

Preheat oven to 180°c and line a baking tin with greaseproof paper.

Sieve the flour and cacao powder into a large mixing bowl, then stir in the sugar.

Melt the chocolate either in a microwave or in a heatproof bowl over a pan of boiling water. If you're using a microwave, check it every 15 seconds to make sure it doesn’t burn.

Stir in the chocolate soy milk, sunflower oil, peppermint extract and melted chocolate. Mix thoroughly to combine.

Pour the brownie batter into the prepared baking tin and place in the oven for 20-25 minutes. When done they should be cooked on the outside and slightly gooey in the centre.

Leave to cool for 5-10 minutes then place on a wire cooling rack until completely cool. I left mine for approximately 2 hours to be completely safe.
Mint Buttercream

In a small bowl, beat the icing sugar, ½ cup butter, mint extract, food colour, and water. If you’re feeling particularly lazy (*cough* me), you can use an electric mixer or even blend it.

Spread evenly over the cooled brownies, then chill until set.
Ganache
-
In a small bowl over simmering water, or in the microwave, melt the butter and the chocolate chips, stirring occasionally until smooth.

Allow to cool slightly, then spread over the top of the mint layer.

Cover, and chill for at least 1 hour before cutting into 16 equal sized squares.
Serve and (finally) enjoy!

Ooo these sound delicious. I love a chocolate and mint combination but also love the chocolate and orange combo too. To be fair any chocolate . Will have to give this one a go, I bet it would make a nice treat during Christmas, maybe even as a dessert to Christmas dinner.
