

It’s 2020. I’m a vegan food blogger, I share lots of healthy or healthier versions of recipes. Can you believe I’d never tried or made a sweet potato brownies recipe until I made this one?! It’s been a long time coming. And I actually think I prefer these to regular ones…Â
Having never made them before, I looked up a few recipes before starting my own – some vegan, some not. Some gluten free, some not. And one thing that I noticed was that a lot of these recipes seemed DRY. In my opinion, all brownies should be gooey. If it isn’t gooey, it’s a chocolate cake. So, I decided to try to make my own version differently. They are very gooey, in the best way. Do not wait for a skewer to come out clean if you’re making these at home! Â

Nutritional Information Â
This recipe might be surprising. As the main ingredients are a vegetable and nut butter, this brownie does have some nutritional benefits. I know that’s probably not a main interest if you’re eating one, but the fact is offers something is still a bonus, right? Per brownie, you get over 100% of the RDA of vitamin A from the sweet potatoes, and 6g protein, mainly from the nut butter. Each brownie provides 10% of your daily iron, from the cacao and dark chocolate, and around an eighth of your daily vitamin E. Â
Obviously not the most nutrient dense snack option, but not bad for a chocolatey treat either. Â

Vegan Sweet Potato Brownies Recipe
Decadent gooey brownies with a little bit of healthy goodness in there too. You’d never know that these brownies were ‘healthier’ than regular ones when the chocolate starts melting in your mouth. Â
This recipe is dairy free, gluten free, soy free and vegan. It can be made nut free if you sub the nut butter for something like wow butter too. Â

Vegan Sweet Potato Brownies
Ingredients
- ¾ cup mashed sweet potato steamed or boiled, then mashed with a fork
- ½ cup nut butter I used peanut, but almond or cashew will also work well
- ½ cup GF oat flour
- ½ cup golden caster sugar
- 4 tbsp maple syrup or alternate liquid sweetener
- â…“ cup raw cacao
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract optional
- ¼ teaspoon salt
- 50 g dark chocolate chips
Instructions

Preheat the oven to 175ºc and line a 9-inch square pan with parchment paper.

In a large bowl, combine the mashed sweet potato, almond butter, cacao powder, sugar, flour, baking powder, vanilla extract, and salt. Stir well, until a relatively smooth batter is formed. (You can do this in a food processor, if you prefer.)

Fold in half of the choc chips. Transfer the batter to the prepared pan and use a spatula to smooth the top, sprinkle the final choc chips over the top. Bake until the edges look dry but still gooey in the middle, and the centre of the brownies have puffed up, about 30 - 35 minutes.

Let the brownies cool completely before slicing, or they will be too soft and break. Cut them into 8 squares, and store the leftovers in an airtight container in the fridge.
Serve and enjoy!

Sounds interesting, sweet potato doesn’t spring to mind when thinking of Brownies, but I’d try it. I’m not vegan or vegetarian, but I do like to get at least one vegetarian meal in a week, and I can see my daughter going that was, as she already won’t eat fish fingers because fish are too cute to eat.
I would never think to put sweet potato is brownies, but these sound so delicious! I will definitely have to try these out. Love how they are nutritious as well!

Sweet potato in sweet bakes sounds a little weird at first thought but just from the pictures alone, I feel I have to this. They look for chocolately and gooey!

I’m going to try this. I may use almond flour though, since it’s what I’ve got in the cabinet! I attempted cauliflower pizza crust last week and it didn’t stay together. I think it would have worked with more cheese, but that defeats the purpose!
