
Welcome to 5 ingredients, 5 recipes – August Recipes. August is a great month for fresh produce in the UK, there’s an abundance of fresh fruit still in season, and a tonne of fresh salad greens and vegetables, so there’s plenty of choice to make fresh, in season August recipes.
This month I wanted to try and keep things as fresh and light as possible but found it really hard to narrow down my options. In the end, I opted to include some fruits that could also be used in savoury dishes, as well as breakfast, dessert and sweet snacks, so even if you have leftovers, you have so many options for what to do with them.
As July is dedicated to strawberries alone, I wanted to make the most of fresh fruit that has a shorter season and picked cherries. So, although there are five ingredients on my list, the cherries are the star of the show this month.

5 August Recipes of the Month
Cherry Quinoa Salad
Fresh cherry salad with quinoa, rocket and crispy tofu. Including two of this month’s five recipes, it’s light and fresh, while still being filling and an excellent source of protein.

Pea & Rosemary Pesto
As an herb, the rosemary wouldn’t technically an ingredient of the month usually, but I did use fresh rosemary for this which I think makes a huge difference to how fresh this dish tastes. It’s a very simple recipe with just seven ingredients. Served here in a broccoli and rocket pasta dish, both ingredients are also in season.

Blueberry Breakfast Pot
Fresh and creamy breakfast pot, that can be eaten immediately or done as an overnight recipe pot. It contains just under 20g of protein and counts as one of your 5-a-day.

Balsamic Cherry Toast
Sour, sharp, sweet all in one bite. Toasted ciabatta topped with vegan cream cheese and topped with balsamic baked cherries.
Cherry Cheesecake
As healthy as all the above options are, we couldn’t end a month with so much fresh fruit in season and not indulge in a dessert too. This cherry cheesecake is so simple to make, tastes absolutely amazing, and doesn’t require any overnight prep. The creamy layer is cashew free, so you’re good to go as soon as you want to start prep. You could also make this recipe with blueberries, strawberries, or any other in-season fruit of your choosing.
