
This balsamic cherry ciabatta makes the most delicious summer brunch recipe. It’s quick and easy to make and the combination of sweet and sour with the sweet creaminess of the cream cheese makes the most complementary full flavour experience.

If you opt to use the same Genius ciabattas that I did, they’re fortified, so this recipe contains quite a lot in terms of vitamins and minerals. Each serving contains 274 calories, 6g of fibre and 4g of protein.
As for vitamins and minerals, each serving contains 25% of your daily B2, 20% of your daily B1, 15% of your daily calcium and 2mg of iron.
Ingredient Choices and Substitutions
I made mine with the Genius ciabattas, which are quite fluffy for GF bread and work really well with this recipe. But if you have another favourite GF option, feel free to use any bread base that you’d like to try. I think this would be great with something thicker, or even a bagel/ breakfast muffin.
I used the Nush cream cheese for this recipe, which is almond milk based, and I love that it has an ever so slight sweetness to it. The sweetness works so well with the sourness of the cherries and the balsamic – but if you have another cream cheese brand of choice, use your favourite. If you’re using one that doesn’t have that sweetness to it, you may want to add a touch more syrup.
I used sweet cherries for this recipe, if you happen to use sour cherries, you could add a little more maple syrup and reduce the amount of balsamic to balance the flavours.

HOW TO STORE AND DOES IT KEEP?
No. Personally, although you could technically pre-roast the cherries for later, I think this dish must be served warm to be fully enjoyable, so I wouldn’t make this one in advance.
BALSAMIC CHERRY CIABATTA RECIPE
Sweet balsamic roasted cherries with cracked black pepper and cream cheese on a toasted ciabatta.
This recipe is gluten free, dairy free, soy free and vegan. It does contain nuts.

BALSAMIC CHERRY CIABATTA RECIPE
Ingredients
- 1 GF ciabatta
- 50 g vegan cream cheese
- 150 g cherries pitted and sliced
- Black pepper
- ¼ cup balsamic vinegar
- 1 tsp maple syrup
Instructions

Preheat the oven to 375F/ 190C. Toss the sliced cherries in a bowl.

Mix the balsamic vinegar and syrup together.

Toss the cherries with the balsamic mix to coat.

Arrange on a baking tray in an even layer.

Bake for 8 to 10 minutes.

While the cherries are cooking, toast your bread of choice/ bagel. Leave to cool for a few minutes.

Spread an even layer of vegan cream cheese over the cooled toast and top with a generous amount of cracked black pepper.

Top with the cooked cherries.
