
As I’m sure we’re all aware, it’s Halloween this week! And with 2020 being the way it is and less celebration taking place, I wasn’t sure whether to make anything to mark the occasion this year. Then I decided to make something seasonal that can double up as a vegan Halloween treat. I’m making a chocolate chip vegan pumpkin cookies recipe that you can serve as a simple cookie or get creative with for Halloween.
Halloween Cookie Ideas
- Use bat/ pumpkin/ something spooky shaped cookie cutters to make them.
- Decorate them with cobwebs, make orange icing, and turn them into little pumpkins.
- …Have fun and get creative, this could be a great bake to make with kids, and the end product is on the healthier side too.

This recipe is inspired by my banana and oat healthy cookies recipe, so check those out if you’re not wanting something Halloween themed, or the idea of putting pumpkins in your cookies isn’t right for you.

Nutritional Information
I know a cookie isn’t of the highest nutritional value even when you make it from healthier ingredients so don’t expect anything too miraculous here, but each cookie contains (with choc chips, not decorated) 3g of fibre, 3g of protein, 124kcal and an eighth of the RDA of vitamin A.
Ingredient Choices
This recipe calls for oat flour, but you could make it with whole rolled oats if you wanted to for more texture in your cookie. I’ve opted for the flour to make them smoother, and this is the best option if you’re wanting to decorate them too.
Please note that the cooking time is the time it takes if you have ready made pumpkin puree, don’t forget to add on extra if you need to pre-roast some.

Vegan Pumpkin Cookies Recipe
An easy healthier Halloween treats recipe to make with kids, or simply serve alone as a seasonal treat.
Ingredients
- 2 cups GF oat flour
- 240 g cooked pumpkin/ pumpkin puree
- 1-2 tbsp maple syrup
- 50 g dark/ vegan milk chocolate chips
Instructions

Preheat oven to 180°c and line a baking tray with greaseproof paper.

Next, either mix the pumpkin puree, oats and syrup in a bowl, or mix them in a blender or food processor for a smoother cookie dough. After that, stir in your chocolate chips then shape the dough into cookies.

For this step you can flour a surface and roll your dough and use cookie cutters, including cute Halloween ones if you’re looking to make healthier Halloween treats. Alternatively, you can divide the dough into eight even sized balls and press them into round cookies by hand for a more rustic homemade cookie.

Place your cookie dough on your lined baking tray and cook in the centre of the oven for 15-20 minutes. 15 minutes will give you more of a soft baked cookie, 20 should give you a crunchier option depending on your preferences.

Leave to cool before removing from the tray
Serve and enjoy!
Recipe Notes
If you’re in the UK, like me, and you can’t find pumpkin puree, 240g is roughly ¼ of a pumpkin. I roasted mine for approximately 25 minutes at 190°c then blended it.
