Vegan Pumpkin Cookies Recipe

An easy healthier Halloween treats recipe to make with kids, or simply serve alone as a seasonal treat.

Ingredients

  • 2 cups GF oat flour
  • 240 g cooked pumpkin/ pumpkin puree
  • 1-2 tbsp maple syrup
  • 50 g dark/ vegan milk chocolate chips

Instructions

  1. Preheat oven to 180°c and line a baking tray with greaseproof paper.

  2. Next, either mix the pumpkin puree, oats and syrup in a bowl, or mix them in a blender or food processor for a smoother cookie dough. After that, stir in your chocolate chips then shape the dough into cookies.
  3. For this step you can flour a surface and roll your dough and use cookie cutters, including cute Halloween ones if you’re looking to make healthier Halloween treats. Alternatively, you can divide the dough into eight even sized balls and press them into round cookies by hand for a more rustic homemade cookie.
  4. Place your cookie dough on your lined baking tray and cook in the centre of the oven for 15-20 minutes. 15 minutes will give you more of a soft baked cookie, 20 should give you a crunchier option depending on your preferences.
  5. Leave to cool before removing from the tray

Recipe Notes

If you’re in the UK, like me, and you can’t find pumpkin puree, 240g is roughly ¼ of a pumpkin. I roasted mine for approximately 25 minutes at 190°c then blended it.
