

Some of you may already know this, but I gift homemade chocolates every Christmas. I think it’s a cute gift, and feels a lot nicer than buying them in, but the Santa and trees silicone tray* is pretty seasonal. And this vegan truffles recipe is perfect for gifting the rest of the year. These chocolates are perfectly simple, take less than 10 minutes to make and are a great gift for every occasion.
These ones have a pretty neutral chocolate flavour, they do have ground almonds as a main ingredient, so there’s a hint of nuttiness, but overall, they’re simply chocolate. Which also means that they’re incredibly easy to customise if you want to make a specific flavour. See substitutions below for easy ways to customise this truffles recipe.

Nutritional Information
A chocolate truffle is hardly the most nutrient dense of recipes, but thanks to the almonds and raw cacao, this recipe does contain some nutritional value. Each truffle contains 2.5g of both fibre and protein, and 1.6mg of iron.
Substitutions
As I mentioned above, this recipe has an incredibly neutral flavour. You can customise this a couple of different ways; the easiest way is to use a flavoured chocolate, like mint or orange for the outer coating. Alternatively, you could add a tsp of a flavoured extract to both the fillings and the outer layer.
Want to make these truffles white chocolate? Substitute the cocoa powder for an extra ¼ cup of ground almonds and use a vegan white chocolate to make the coating.
You can also roll the finished truffles in chocolate chips, coconut, sprinkles, ground almonds etc if you want to add some extra finishing touches.

How to store and does it keep?
As there’s nothing fresh in this recipe, they’ll keep for a pretty long time. As long as they’re stored in the fridge, you can keep these for up to a month, but good luck making them last that long.

Easy Vegan Chocolate Truffles Recipe
Ingredients
- ½ cup ground almonds
- ¼ cup GF oat flour
- ¼ cup cacao powder
- 2 ½ tbsp butterscotch syrup
- 2 tbsp sweetened dairy free milk of your choice
- ½ cup vegan chocolate chips
- 1 ½ tsp vegan butter
Instructions

Start by mixing together all the ingredients for the filling in a bowl until combined – almonds, oat flour, cacao powder, syrup and vegan milk.

Use a teaspoon and roll the mixture into balls. If you’re familiar with Nakd bars, they should have a similar glossy appearance as one of those.

Place the chocolate chips and vegan butter in a microwave safe bowl. Microwave in 30 second increments to ensure the chocolate does not burn. (Example: Microwave for 30 seconds, stir the chocolate and then place back into the microwave.) Repeat this until the chocolate is completely melted. Alternatively, for a thicker chocolate coating, wait until they’re about ¾ melted, then stir in the remaining (not fully melted) chips to make more of a chocolate paste than smooth melted chocolate.

Coat each of the balls in the melted chocolate.

Place into the freezer for 30-45 minutes to set.

Store the truffles in the fridge.
