
This tropical bircher muesli is a quick, nutritious breakfast, perfect for spring.
Nutritional Information
This recipe contains two of your five a day and at least seven plant points, possibly more depending on your muesli of choice.
Each pot contains 482 amount of calories, 17 grams of protein and 13g fibre. Thanks to the fresh pineapple and the juice, this recipe is also rich in vitamin C providing 70% of your recommended daily amount. The chia seeds also contain a source of plant based omega 3. Each serving also contains 2.2mg iron and over half of the recommended amount of manganese.

Ingredient Choices and Substitutions
I opted for pineapple and passionfuit as they are both in season at this time of year and opted for the apple and mango juice as complementary flavours that also add additional plant points. You can switch the fruits for anything else of your choosing. Mango would be delicious as a base fruit (opt for something juice if you’re planning on switching).
My muesli of choice today was the Amisa Fruity Oat Muesli, which has a range of dried fruits in it, adding some extra flavours and texture. Alternatively, you can use a nutty muesli for extra crunch. As always, I used the Alpro Greek Style Yoghurt, but you can swap this for any Greek yoghurt alternative.

Tropical Bircher Muesli Recipe
Ingredients
- 1 medium ring pineapple chopped
- ½ cup apple and mango juice/ smoothie
- 1 tbsp chia seeds
- 1 passionfruit
- 50 g gluten free vegan muesli
- 2 heaped tbsp vegan Greek Yoghurt
- Small handful of almonds
Instructions

Add your chopped pineapple to the base of a jar/ container you can store your muesli in overnight.

In another dish, mix your muesli, chia, liquid and passionfruit. Transfer the mx to your jar to top the pineapple. Place in the fridge overnight or for at least 5 hours.

When ready to eat, top your mix with your yoghurt and finally finish with your almonds.
