
Strawberry white chocolate Rice Krispy treats recipe, an easy and fun Wimbledon inspired recipe to make with kids.
This one isn’t the creamiest of strawberries and cream inspired recipes, but it’s a fun recipe and makes delicious relatively low calorie treats everyone can enjoy.

Ingredients and Substitutions
For this recipe, I used the Nestle Go Free Gluten Free Rice Krispies, a commonplace brand available in most larger supermarkets. If anyone is looking for a cheaper alternative, most supermarkets do have their own brand alternative. However, I’ve noticed that a lot of those options are smaller and crisper than popped so they don’t hold together quite as well as the name brand version does. And I used the M&S plant kitchen marshmallows, I find they have a nicer texture and slightly more flavour than some of the other vegan marshmallows available on the market.
I used Urban Fruit Strawberry in this recipe, which are gently baked strawberries with a gummy texture. If you don’t have that brand where you are, try to find something similar. If you’re really in a pinch, sub for freeze-dried strawberries, but they obviously have a different texture.
How to store and does it keep?
As there are no fresh ingredients in this recipe, they’ll keep for quite a while and don’t need to be refrigerated after they’ve set. Store in an airtight container and keep them somewhere cool and they should taste just as fresh as day one for up to a week.

An easy summer inspired childhood favourite treat, great to make with kids.
This recipe is gluten free, dairy free and vegan. It can be nut and soy free depending on your choice of dairy alternatives and free from chocolate.

Strawberry White Chocolate Rice Krispy Treats
Ingredients
- 70 g GF Popped Rice Cereal
- 120 g vegan marshmallows
- 60 g vegan white chocolate
- 50 g Urban Fruit Strawberry
- 1 ½ tbsp dairy free spread/ margarine
Instructions

In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted, then stir in the orange oil. Remove from heat.

Add your cereal, 40g of white chocolate and Urban Fruit Strawberries. Stir until well coated.

Using a spatula evenly press mixture into a dish coated with cooking spray or lined with greaseproof paper. Leave to set and cool.

Melt your remaining chocolate, either in a microwave safe bowl or by placing in a glass bowl over a pan of boiling water, and drizzle the melted chocolate over the top.

Once the chocolate has set, slice into bars or squares. This recipe makes 8 large bars.
